The Most Festive Christmas Cookies: Grinch Cookies

- Grinch cookies are so fun and festive with their bright green color, subtle mint flavor, and colorful M&M candy pieces! My recipe comes together in minutes with NO chilling required.

Ingredients
1 cup unsalted butter, softened (226g)
1 ⅔ cups granulated sugar (334g)
2 eggs, room temperature preferred
2 teaspoons vanilla extract
1 teaspoon peppermint extract
3 cups all-purpose flour (375g)
2 Tablespoons cornstarch
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
Green food coloring (i used Americolor leaf green)
1 cup red and green M&Ms, plus more for topping 376g

Instructions
00:00 Introduction
00:25 Preheat oven to 350F (175C) and line several baking sheets with parchment paper. Set aside.
00:30 In a large mixing bowl, use an electric mixer (or stand mixer) to cream butter and sugar together until light and fluffy.
01:13 Add eggs, vanilla extract, and peppermint extract and stir until thoroughly combined.
02:17 In a separate, medium-sized mixing bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt.
03:10 Gradually stir dry ingredients into wet until completely combined.
04:07 Add food coloring (if using) and stir until fully combined.
05:15 Use a spatula to fold in M&Ms until evenly distributed through batter.
05:50 Scoop by 1 ½ Tablespoon-sized scoop and drop onto baking sheet, spacing cookies at least 2” (5cm) apart.
06:40 Bake in center rack of 350F (175C) preheated oven for 8-10 minutes. Remove from oven and allow to cool completely on baking sheet before enjoying.

Just made these tonight. As much as I'd love to get into peppermint flavored desserts for the holidays, I never do. But these are perfect in that, the peppermint is there but not predominant. Probably ideal for my palate. I recommend!

I made these today for my cookie party they are very good. I used the natural peppermint oil so I only used 1/4 teaspoon because it's super strong just saying if anyone else has it the quarter teaspoon gave it a nice subtle mint taste. Thanks for your videos I love them all!

Have you ever baked with Sun Butter? There is a chemical reaction that happens during the baking process and the cookies will turn green once they cool off. It would obviously take a different formula to make these using that, but might be an interesting way to get green without having to use the food coloring.

I really like your attention to detail where you rounded the cookies using a couple of spoons. I’ve never seen anyone else do that, but it’s a fantastic idea. Do you foresee any problems adding a little more green food color to make the cookies darker green? I don’t want to add so much that people’s have stained tongues, but I’d like to have a little more contrast. I know that you do more R&D than many UA-camrs and I’m just wondering if this is something you tested. Excellent video!

How do you avoid a wetter/soft bottom on the cookie when you let them cool completely on the sheet" I would prefer a slightly crisp bottom achieved by moving them to a rack. Should the cookies stay in the oven longer to cook more, if you don't want them to cool on the cookie sheet?
Yes you can cook them longer if you don’t want them soft 🙂
I will make these cookies but I would have to leave the food colouring out because I am not aloud have food colouring because I have got eczema skin condition. Food colouring is not good for me but I will still make these delicious cookies ❤😊😋
