Learn how to make caramel sauce using just sugar and water. No cream or butter required. Lots of people find the idea of making caramel scary, but this method is simple and you don't need any special equipment like a thermometer. Just follow the tips in the video, and you can't go wrong!

Caramel Recipe in grams:
- 250 gr Sugar
- 75 gr Water
Add at the end:
- 90 gr Warm Water
-1 tsp of Salt
Important and interesting facts about caramel:
◘ Do NOT taste the caramel when hot. Allow it to cool before tasting.
◘ When the caramel has turned an amber color it can burn within seconds. Do not walk away.
◘ More water is added at the end otherwise the caramel will harden.
◘ The amount of water you add at the end will determine how loose or how thick your caramel will be. For a looser caramel add more water. For a thicker sauce add less water at the end.

Caramel Recipe in cups:
- 1 1/4 cups Sugar
- 1/4 cup + 1 tbsp Water
Add at the end:
- 1/4 cup + 2 tbsp Warm Water
- 1 tsp of Salt

Hi Emma, I tried your recipe and I add milk instead of plain water and 1 tsp butter at the end. it turned out amazing and perfect couple for my milk coffee. 😻
Hi! May I ask, how long did your syrup last? I want to try making it with butter too but I'm worried about the shelf-life.

just tried this and i had a little bit on the edge of my pot that i missed, so when the caramel browned and i poured in the water and salt, and then stirred, it started to crystallize!! thankfully i moved fast and strained it into a bowl, and got a good amount of clear silky caramel, but i lost about 1/8 to crystallization.. now i'm just waiting for it to cool and thicken, so i can swirl some in the brownies I'm gonna make!

This is the third year in a row that I've come back to this recipe because I just can't remember the measurements for the ingredients, haha. The first year, I had never even thought of making caramel before, but this recipe made it so easy to make! The only thing I did differently was that I actually dissolved the salt in the warm water before adding it to the finished caramel because for some reason, it just wasn't dissolving when I sprinkled it in after.

What do u mean by coating?
A soft fondant like the icing you find on choux buns here in Italy (I live in Italy too 😊) It sets nicely when cold. (Glassa fondente)

Emma's Goodies Sono anglo/italiana 😊 That's just a glacè icing right? Here in Sardinia they use a fondant icing which I can't quite master. Granulated sugar, bit of liquid glucose and water. Boiled to a certain stage then poured out onto a marble slab or similar, and as it cools it gets white and thick. Maybe it is a Sardinian thing lol 😊
