Hi i used to make caramel apples for Rocky Chocolate Factory. Here's some answers to FAQ ive seen: 1. If your caramel is too runny, you gotta cook it longer at a lower heat. The darker the caramel gets, the thicker it will be. I noticed his was sliding off too. Notice the m&m's sliding off while they sat; that's how you know its actually not ready. Do a test apple and let it sit, if it starts to pool at the bottom or you can still see the apple color through the caramel, it needs more time. Also don't afraid to stir, aggitating it helps with the viscosity. 2. Yes, you can use white sugar, that's what RMCF would use. 3. Yes, you can store it and re-heat for later use. But do not store it in a fridge, in cool to room-temp is fine. Hope this helps(:
I prefer mine darker and thicker. I don't have them often but remember as a kid, my mom would make them like a diabetes dream of thick chewy caramel.. not the healthiest but soo good.
Yeah, when I make these, I cook to 245 instead of 235. That’ll allow the leftovers to be used to make caramel candies firm enough to hold their shape at room temperature….at 235, or even 240, it’s still too soft to do that.
Here in germany we have Bratapfel: from the clean apple (not peeled) take out the core, fill ist with rasins (put them overnight in rum) and almonds and marzipan. Put them in to a baking dish, into a hot oven ca 30 min. Serve ist with vanilla icecream oder custard.

I’ve live in New England (New Hampshire) most of my life. The fall is the best time of year here. It’s beautiful in the fall and the farms come alive here with apples, pumpkins, hay rides, and corn mazes and haunted houses/hay rides. Luv it here this time of year. Hope you love it too!

Just made this recipe and let me just say woooow 😋 if you’ve had Sees butterscotch lollipops, this is almost the same flavor!! Great taste and definitely don’t forget ingredients! I forgot the salt and it wasn’t harden, put the salt in mixed it and put it back on the heat! (Also didn’t use a thermometer) can’t wait for the apples to set 🥹😍😋

Our caramel apple here in Brazil is called "maçã-do-amor" (love apple, literal translation) and it's just simple caramel (made out of only sugar) and red coloring. It's found more easily around June/July due to certain festivities ☺

I made this. I needed a big batch of 50 apples. I was adding two times the amount of everything until I got to corn syrup. You didn't mention how much so I followed the link to the recipe. The first thing I saw was DO NOT DOUBLE RECIPE ...I had no choice but to proceed. The result was an almost overflowing mess of cream and sugar but I was able to dump half into my other instant pot and finish them both and they both came out spectacular!! Best caramel for apples!!

At about 210F the entire volume foams up to about 3x its starting volume and then it won’t get above 215F. (I live in a suburb of Denver, CO at about 5,900 ft above sea level.)
The only time I had a rest from wanting to make all of these recipes was during the pumpkin marathon this month. If I'm at someone's house and they have pumpkin pie with whipped cream that would be insulting to the cook to decline, I'll suffer through it.
It took me three tries to get the caramel right, but each time it was delicious... It just wouldn't harden. Third time was the charm, and we ended up with the most delicious caramel apples I have ever had... Thanks for this amazing recipe....
@@MsOmazin temperature! You MUST have a good instant thermometer. You need to be between 235 and 240 degrees. Drop some in ice water to check how it hardens.

I had no idea you could put everything in a pot, from the start. Every recipe I've seen for caramel has you add the cream at the end. This seems so much easier and less scary, the bubbling of adding the cream always scared me. I was scared it was gonna burn and leave a terrible taste, and not mix in properly. Thanks for this 😊
My early memories of Apple caramel comes from kindergarten and primary school days. We use to get them right after the school was over. The lady who made them use to color the caramel red/maroon to match the apples. Haven't had it since then but how nostalgic was this recipe.

How would you suggest reheating? I plan to make this for a gift for all my coworkers and give them each a little jar of caramel and 2 apples for Christmas. I wanted to include instructions for reheating it so they can dip their own. 😁
A trick for anyone who hates to chop nuts; just use a clean coffee mug on a Silpat or rubber type cutting board and just hold it by the handle and gently smoosh them by rolling over them with your mug. Please *do not* go bonkers and smash your mug. Works great for peanuts and I have not tried others, but seems like pecans, hazelnuts and pistachios would work with this method as well. I would not try it with almonds or other very hard nuts.
That is why you remove the wax from the apples and wait for the temperature to reduce to 190 degrees before dipping. I also like to put them in the fridge for 15 minutes after dipping and coating.
My hometown has a candy store that is known for the caramel apples it sells in September and October. Sooooo rich and thick with delicious caramel, nothing like the Taffy Apples at the grocery store.
So I made this recipe last night and followed everything to the letter. Temperatures were both right but for some reason caramel never really set. Still very drippy. Works great as a dipping sauce for Apple slices but slide off my apples. And again yes I followed every single step.
I tried this recipe, dipped the apples at 190 degrees and my caramel starts to slide down the next day (rm temp) and when left in fridge, it's too hard. I wish I knew what really sets the apple without the caramel sliding down the bottom of apple. And yes, I cleaned the wax off the apples and let apples sit in the fridge to cool b4 Dipping. I need to try another recipe. 😩
This just happened to me too. Followed it to the t and reheated it. It got thicker but like a caramel sauce consistency. Very good by not caramel for caramel apples. I’ll store this as caramel sauce and try it again another day. I got this strange feeling it’s supposed to be less heavy cream just seemed like to much when I was putting it in. I don’t know but happy eating everone

I cheated the other day and just melted Kraft caramels. They were fine, not hit it out of the park, but fine. The caramel was hard, not soft and chewy. I wish he'd make a Linzer Torte. I've seen soooo many different recipes on UA-cam and most are in German (understandably), but I just want one definitive recipe. I was told it's a Christmas treat and I'd like to try to make it before then. My father-in-law mentioned having it in Switzerland, way back when, it had raspberry jam and almonds he said. He's 81 now and I'd like to surprise him with it.

No Caramels on this island, only hope was ordering online and waiting....Been watching your youtube videos for awhile and when I saw this one I suddenly got brave and said why not! Had to use heavy whipping cream and forgot the thermometer, so tried the "soft ball stage". I must say we (family and friends) were all blown away. I tried a recipe in a very old Betty Crocker picture cook book. I don’t know what happened by the caramel didn’t thicken up. I don’t know what happened. Now what? I hate to throw it away. Any ideas what causes it not to thicken? I can’t wait to try your recipe. It looks so simple!

I had the same problem. So disappointing! I cleaned off the wax, etc. but the caramel never thickened to a point where it stayed on the apple.

I just want to say thank you so much for this recipe and for clear, concise directions. When you say easy, you mean it! No Caramels on this island, only hope was ordering online and waiting....Been watching your youtube videos for awhile and when I saw this one I suddenly got brave and said why not! Had to use heavy whipping cream and forgot the thermometer, so tried the "soft ball stage". I must say we (family and friends) were all blown away. It taste wonderful, ah memory lane, it set up perfectly and it was easy! Thank you, thank you, cant wait to try the next one, maybe fudge! Christmas giving is going to be a blast! Aloha.

I tried a recipe in a very old Betty Crocker picture cook book. I don’t know what happened by the caramel didn’t thicken up. I don’t know what happened. Now what? I hate to throw it away. Any ideas what causes it not to thicken? I can’t wait to try your recipe. It looks so simple!
