    There is something about fudge that fascinates yet strikes fear into the heart of the home cook. And I will admit, there’s a lot of physical chemistry involved in making old fashioned fudge. The recipe calls for combining and boiling milk, bitter chocolate, and sugar together until the temperature reaches 237°F/114°C (known as the “soft-ball stage”), pouring the seething mixture into a bowl, cooling it to 110°F/43°C, and then beating the candy until the surface shine disappears.
    These two fudge recipes are completely different because there is no cooking, cooling, or beating required.

    Your videos are much more comfortable than other channels. I love all vegan channels but you are the only one who wear neatural clothes, have stable camera and not one that moves around, and the colors are all around white and clear so it is much easier to follow your steps. This is huge for people with ADD or ADHD like me! Thank you and never change! ❤
    Btw, would love to see overnight oats in many flavors... 🤗

    I value both recipes, thank you! However, the best part is the advice to pour the melted fudge on top of the raw fudge. BRILLIANT!! I would only make this for a crowd or I’d surely add to the weight that I need to loose!

    Stove top chocolate. How much gram of chocolate & how much almond butter Grams syrup ml & coconut milk a tin? You say don’t go over amounts but it doesn’t state the amounts can someone guide me in the right direction please

    I would choose the cocoa fudge because I can replace cacao with carob, since cocoa has a caffeine-like effect and interferes with sleep. It also has histamine and teobromine.
    So carob is better.

      I would say it's better than cocoa because it's not that bitter, it's a little sweeter. It's 90% identical.

      To add to the conversation, as Arrasel said, carob is sweeter than cocoa but doesn't have such a rich flavor profile as carob. If you have histamine issues, I would definitely give it a try.

      Definitely. Just be careful that you don't introduce too much water (from the steam) into the chocolate. I prefer LOW direct heat for that reason, but a double broiler is a great option!

      Try sunflower butter, flaxseeds or no nuts brand peabutter.

      Definitely. As others said, try sunflower seed butter, tiger nut butter (if you can't find it, you can make it yourself), or any other nut-free "nut butter". Enjoy the recipe :)
