    You need the beater attachments not the whisk. Although two forks work just fine for me.

      I was just going to say that. I don't like using the hand mixer either. I let the chicken cool, wash my hands and shred the chicken with my hands. Works great!

      I cringed when I saw the whisk lol. If the chicken is still warm and you use the beaters, the hand mixer is a dream come true.

      I actually use my hand mixer but I use both attachments on it. Works fine for me. I do actually add a little bit of the broth to get it going. Not a lot but just enough to make it moist.

    Try Las Palmas enchilada sauce. It tastes great and is 2g net carbs per 1/4 cup :)

    The sliced deli chicken breast hack is delicious, I've also used egglife wraps for enchiladas and that's also delicious!

    The mixer works great….while still very warm, and with two beaters. I promise. I use it right in the slow cooker as soon as the chicken is done.👍🏼

      Me too... I add a little bit of the broth and if it's too wet after I'm done with the 2 beaters on my mixer, I'll drain it a little bit.That's the only way I'm shredding chicken. I'm too lazy to do the fork method. Plus I hate hearing the scratching sound of the forks.

    I've been using deli chicken for my tortillas too. I fill mine with cheese. Then I mix sour cream into green enchilada sauce. Delish and super easy.

    Thats a great recipes, I will make my own tortilla shells so pretty clean (serious keto 90 sec tortilla shell) and a great option for the regular recipes.

    Love using the chicken meat. Instead of rolling it, I layer it into an enchilada casserole. So much easier.

    You can use this as a dip or sauce :)
    Enchilada sauce recipe:
    olive oil or avocado oil - 2 tablespoons
    cottage cheese - cup or tub.
    chilli powder - half teaspoon
    cumin - half teaspoon
    oregano - half teaspoon
    garlic powder - half teaspoon
    salt - to taste or half teaspoon
    vegatable stock cube (add to water first) - half cup

    I use trader Jo’s enchilada sauce…. Just sharp cheddar + onion…. Topped sour cream…. We really like it… don’t need tortillas …just sliced chicken or turkey to replace tortillas….

    Hi huns, the meat shredding thing is for meat that has been cooked in slow cooker. As far as I know, doesn't work with fried or grilled chicken. Use two whisks instead of one. Done this a lot. It really does work if it's done right. Love this channel. Thank you.

    Pretty please give the automated method another try: it’s so nice. Shred the chicken using the beater attachment or a stand mixer such as a kitchen aid: while the chicken is still hot. It took me 30 seconds and it turned out perfect.

    I am a hand, not even a fork shredder. Grosses me out to find fat or that little hard tendon or whatever it is on chicken breasts. Doing it by hand let’s me make sure nothing like that escapes and gets in. Love your channel!

    If you poach the chicken breast in stock or broth on the stove top, it only takes roughly 30 mins to boil it, then it practically falls apart by itself and is sooooo juicy tender. I love this method and use it for everything from tacos to soup to casseroles to pizza to lasagna and all I change are the seasonings

    Tajine! Nothing wrong with OEP enchie sauce easier to count your carbs! I use meat with sauce and cheese in layers and add chopped black olives and green onions. Hamburger, ground turkey, shredded chicken or turkey. Just several layers no tortillas or zucchini etc. I love your recipes Lovely ladies! I send you much love.

    El Pato Enchilada sauce has 3 gram of carbs and 2 grams of fiber 1 gram of sugar. I love this sauce. Happy Sinco DiMaio.

    I don’t think a hand mixer would work for this honestly, however a stand mixer definitely does. I’ve been doing my shredded chicken that way for many many years.

    Made the chicken enchiladas tonight, super tasty! Half the pan I made with smoked turkey lunch meat in place of shells (for me), the other half of the pan I used regular tortilla shells (for him). Plus I used green salsa Verde sauce for me, regular enchilada sauce for him. Rotisserie chicken, shredded, check. Super good, super easy! Thank you for sharing.

    You have to use the beater attachment. The whisker will not work - and you need both attachments in there. It will shred the chicken in seconds.

    Forks for the win! I personally use the two fork method myself because I like the control and easier cleanup. I also mince garlic with a chef's knife instead of a garlic press because I'm not a fan of one use kitchen gadgets.

    I do the rotisserie chicken, shredding it is super simple since it's softer. Plus if you buy them on sale, buy more, go ahead and shred them, then freeze them for using later. I am so happy y'all tried this recipe using chicken slices for the tortilla. I have seen that method before, but wasn't sure how well it would hold up and how it compared with taste. Thank you ladies !!!

    For a lower carb version try the Egglife tortillas Southwestern flavor (which are great and do not have that eggey taste) that have only one carb per tortilla. They hold up real well as tacos. I'm sure they would be great as enchiladas.

    Hi Ladies. Awesome video. Love the chicken wrap enchiladas, they really are delicious! For an even more authentic enchilada, you guys should try Ala Madre tortillas. They are only 3 carbs a piece, are made from corn and are amaaaaaaaazing! They are pricey but definitely worth it to bring tacos and enchiladas back into rotation. 😊

    This looks good. I’ll just get some shredded rotisserie chicken at the store. I’m way too lazy to cook and shred my own. But I like the idea of chicken wrapped in chicken. Yum.

    Try the egglife wraps! They look and taste like tortillas, but made with egg whites. I get mine from sprouts in refrigerator section. Little pricey, but at only 1 total carb so worth it.

    I go to the deli counter and have them slice my turkey at a 2 so it’s thicker. I also use a green sauce. So yummy 😋

    Try the La Banderita Low Carb brand tortillas. They are made with olive oil and are the same quality as the Mission brand.

    The attachment you were using is a whisk. You need to use the regular beaters, both of them at once. And it works best when the chicken is still hot. This recipe looks delicious! I will definitely be trying it. Thank you!!

    El Pato enchilada sauce is only 1 net carb. Not sure what stores you have there but in the west you can buy them at WinCo or 99 cents only stores.

    Have you tried the 90-second tortillas? On Serious Ketoin's second video, I found that he shows how to make 90-sec tortillas. I do the one with Pank pork rinds. That's my go-to. They make great enchiladas, tacos, and burritos. I'm sure they would make great pizza and lasagna just haven't missed that as much as Mexican food.

    A hand mixer with two beaters might have worked, but I usually just use 2 forks.

    Howdy and Happy Tuesday. I haven't had enchiladas in so long. I can certainly see going with either option based on how the macros fit into your day. Special day have some tortillas. Lower carb use the chicken. Thanks for giving it a try. Often things that are close enough and have all the right flavors work as a great substitute for me.

    To shred the chicken, you have to use the regular beaters, not whisk beaters.

    I think I would cut the unused tortilla in 5 strips and dunk one in the sauce and put it in the interior of the deli chicken wrapped enchilada.

    I use Joseph's Flax, oat bran, multi grain Lavash bread, sliced in half. They make burrito sized enchiladas and the lavash bread only has like 4 net carbs each.

    I don’t know if you’ve ever eaten regular jarred black olives.. personally.. the canned ones taste horrible to me.. try some good olives next time. A world of difference. Loved this video..

    I been using Egglife tortillas

    I love enchiladas made with chicken or turkey lunch meat to wrap it in. They are fabulous. I'm going to have to try with the carb sense tortilla. I love them for other stuff, so I'm sure it will be great, also. Valli

    Maybe cut the flour tortillas in strips and put a stop in each when you roll the cold cut chicken….

    Great. Now I’m hungry and it’s not even time for breakfast yet. Those look delicious. I would love to try the ground beef version with EggLife wraps. They are my new favorite sub for wrap material. They have a store locator on their website. I found them at a Meijer near home. They have a bit of a spongy texture but it’s not objectionable. I’ve been making BBQ shredded pork wraps with the Anything Bagel seasoning version. The low carb tortillas make me feel very groggy like I’ve been really carbed up. Must be one of the other ingredients that replaces the wheat flour.

      I made them this evening with the EggLife wraps and they were great. The texture is somewhere between a flour wrap and a corn tortilla. Flavor and taste were wonderful.

    Use a regular beater on your chicken even if it's tough lol..that thing is too flimsy lol. But I love your willingness to give it a try

    on her last Live, did a very simple beef enchilada using a very slight twist of a Chef Fat Grams recipe. It also makes the tortillas & sauce...both very few ingredients, super quick & easy! 😊

    Could I ask a question ? I have been on ketos for 5 months and have lost 55 pounds. Am I loosing it to fast? I’m eating. 1200 cal a day and 20 carbs a day. What do you think? I know you two are not doctors, but I don’t know who to ask.

      Hi Kelly! If you have a lot to lose that seems like a reasonable number. Most people lose 1-2 lbs a week and you are a losing a bit more than that. As you get closer to your goal weight it will slow down! -Em
