Goan Chicken Vindaloo

  • We're 6 days into 2023, and I wish you the Absolute Best of health and all things necessary for all the coming days of this year❤️ Also, Boas Festas to those celebrating the Three Kings Feast :)
    The Goan Vindaloo (pronounced vin-dah-loo) is famous, no doubt about that. Usually a pork curry, this dense, sour and spicy paste can also be used with Chicken to create a delicious addition to a meal. Top your rice/pulav with it or dip your pao/poee/sanna in it- you'll be glad you did. That's a little bit of Goa on your plate :)
    Ingredients:
    For the Chicken Vindaloo paste:
    6 Kashmiri Red Chilies
    1/4 teaspoon Turmeric Powder
    12 Black Peppercorns
    6 Cloves
    1/2 teaspoon Mustard Seeds*
    1/2 teaspoon Cumin Seeds
    1" Cinnamon
    1" Ginger
    6-7 Garlic Cloves
    2 Tablespoons White Vinegar
    A little water for grinding
    *When preparing Vindaloo paste for pork, I skip the Mustard Seeds
    1/2 kg Chicken pieces
    Salt
    2 - 3 Tablespoons Oil
    2 medium-sized Onions, finely chopped
    Approx 2 Cups water
    1/4 Cup Tamarind water
    1/2 teaspoon Sugar

    Thanks for the post. This brought back old memories of the first time I had vindaloo way back in, I think, 1978 when I was visiting Goa. If I remember right, it was pork vindaloo. It was very spicy.

    I always made vindaloo using pork . Let me give it a try with chicken.

      I agree with you on the vindaloo -for me it seems to be true with all the vinegar-based recipes. The flavour just penetrates the meat better and develops amazingly the following day😋

    Ma'am i liked your receipe very much but i made little changes mrinated chicken tumeric ,salt g.g pàste kept for some time ground d masala fried d marinated chicken ind fried onion so all d water evaporate chicken becme firm n cooked open once d chicken half cooked add d masala cook for some more time the grave n d meat remain alittle separate this too look ok

    Tried this recipe today. Its taste same like your pork vindaloo yummy.
    But i just wanted know how did you get a thick gravy consistency? I did grind my masala with less water and smooth. But still mine turned out to be a bit watery.
    Any suggestions how to get a thick gravy consistency?

    Only 2 tablespoons of vinegar? Is that so this recipe appeals to Americans? How much vinegar would you use if you were cooking this for your own Goan family? I am very interested in authentic Goan cuisine, so your answer is very important to me.

      It’s an indulgent dish; the vindaloo is a recipe cooked for special occasions. There is no fear in the face of celebration.
      However, you can do it with less for health reasons :)

      @@FlorencyDias just ate the dish for dinner. I find the cinnamon flavour overpowering. Next time I won’t powderize the cinnamon. I’ll just throw the stick in so the flavour isn’t too strong.
