- Chicken Vindaloo Recipe Restaurant Style - How to Make Vindaloo Masala
Vindaloo created in the Portuguese - Indian colony Of Goa, were generally made with pork. Vindaloo got its name from the Portuguese words for their most important seasonings, wine (vinho - in this case wine vinegar) and garlic (alhos). Vindaloo is a combination of many aromatic spices and the use of vinegar along with these spices acts like a pickling preservative. It is quite a spicy hot dish but you can definitely use less chillies and make it mild. If possible please make it a day before you plan to serve as the taste gets better with time.

Ingredients required for making chicken vindaloo -
For making Vindaloo masala - Serves 8
* 4 dry Kashmiri red chillies. Use half the stated proportion if you do not want it to be too spicy. You can use any type of dry red chillies. Kashmiri red chillies are milder in terms of heat level but it can still be overwhelming for some people. So please use half the quantity than the above stated proportion to start with. If you do not have dry red chillies then use a combination of 1 heaped tablespoon of paprika and 1/2 teaspoon(or as much heat you like) of cayenne pepper. Deseed the red chillies and soak them in hot water for about an hour.
* 2 teaspoon cumin seeds (jeera)
* 1 teaspoon black peppercorns (kali mirch)
* 5 green cardamoms (choti elaichii)
* 1/4 th teaspoon fenugreek seeds (methi) - totally optional
* 1 teaspoon yellow or black mustard seeds (rai dana)
* 1 teaspoon coriander seeds (dhania)
* 1 inch length cinnamon stick (dalchini)
* 3 to 4 cloves (lavang)
* 1 whole head of garlic/12 cloves/ 32 gm
* 1 inch length ginger (optional)
* 3 tablespoons apple cider vinegar. You can even go up to 4 to 5 tablespoons of vinegar. Substitutes - white vinegar, rice wine vinegar, red wine vinegar, malt vinegar or balsamic vinegar.
* 1 teaspoon sweet paprika
* 1/4 th teaspoon turmeric powder
* 1 large tomato
* 2 to 3 tablespoons of water or just as much needed to make a smooth paste. Please do not add too much water. It needs to be a thick paste.
For marinating chicken -
* 4 to 5 tablespoons of the vindaloo masala
* 1 teaspoon oil
Marinate for a minimum of 1 hour, overnight will be better.
For the main recipe -
* 1 kilo/ 2.2 lb skinless chicken thighs (combination of with and without bones)
* 1 very large onion /5 oz
* salt as per taste
* 1 tablespoon sugar (adjust according to your preference)
* 3 to 4 tablespoons oil
* I used just 1/2 cup water to rinse out my blender jar.
Serve this with hot steamed rice. It stays good for about 5 to 6 days in the refrigerator or you can freeze it.

Where did u get yr blender n wats the name.
Hi Christine, this is nutribullet blender.
I like to add big pieces of cauliflower to this, and although not traditional, I also add a can of roma tomatoes to thin out the heat a little bit, and a few potato chunks. I wanted something authentic besides using the jarred paste and this is it. also, is it traditional or ever done to add a bit of vinegar right at the end before serving? seems like I saw that somewhere. to brighten it up?
@@fredgarv79 you can definitely add potatoes. Potatoes taste delicious in any type of curry. Adding vinegar at the end is a matter of choice and individual preference. According to me do what you think is best for you and works out for you. A recipe is just a guide. Thanks a lot for your feedback. Really appreciate it.
@@CurriesWithBumbi I read other recipes but I really like your method of browning the onions first, then adding the paste back into the onions and browning it all a bit. caramelizing it. then later add your water etc. (another recipe I saw used raw red onions and marinated them with the chicken. no browning. I think yours is much better) I added chicken stock and some tomato sauce then slow cook it. Do Indian recipes use zucchini at all? I was going to add some zucchini but forgot to do it. seems like that might absorb the sauce nicely. I like to make my own keema samosas with lamb carrots and peas, massala etc and I always used store bought spring roll wrappers or samosas wrappers and it just did not seem like the original crispy ones I had had in restaurants that were so amazingly good. So I saw that you should make your own dough recipe just using regular flour and wow much much better than the store bought wrappers. it was a lot of work to make the dough, then stuff each individual one with all the ingredients, but with the tamarind chutney and cilantro chutney sauces, they are so good. I also make saag paneer and take it over to my relatives who have no idea what it is, and they love it.
I started making this, and it changed my life. My kids love dinner again, they finally respect me and my wife came back.
😀
Gold, my brother, gold!!!!!
I rarely comment on youtube videos but this needs an exception. Just finished making this vindaloo and it is absolutely gorgeous. Usually I have issue that with many recipes, you need to add more of everything to have really spicy and tasteful result, but with your recipe, followed exactly step by step and it is insanely good. Thank you Bumbi, will definitely try more of your recipes!
So very glad that you liked the recipe. Thanks for sending your lovely feedback. Stay tuned.
My first time seeing your content! I love that you added the translated names of the ingredients! Will make this this weekend!
Turned out excellent. Thank you for sharing.
just everything about this... yum yum yum
Looks great & definitely delicious
This was my first time really trying to cook on my own, and honestly it changed my perspective on a lot of things! The meal came out wonderfully and it makes me so excited to try out other dishes. Thank you!
So happy to hear that. All credit goes to you as you put in all that effort into making it. Thanks for your feedback 🙏🏾
I've been meaning to make a vindaloo from scratch for years. So glad I found this video as it looks like exactly what I had in mind. Thank you!
Waiting to try it out. Looks delicious.
Excellent video! Subscribed! Going to try this recipe this weekend, thanks!
Sounds great. Please do send me your feedback. Thanks for your support 🙏🏾
One of my favorite recipes of all time! And this is no exception. This is delicious 👌
Your voice is so peaceful I love it. I am going to try this recipe soon as I am also a spice lover!
Love the way you presented the video. Being a chef of 25 years does help to get the best out of your cooking. So for anyone who tries this recipe, prep time is essential, make sure you have everything to hand and don't get too despondent if it doesn't look exactly the same. Kashmiri chillies are there for the rich colour they give to the curry more than the heat they provide, as they are very mild. The chilli powder, sugar and vinegar are probably the 3 key ingredients to not overuse. Remember, you can always add but never take away. I prefer to use dried methi, crumbled in my vindaloo's, as it brings out more flavour. Sourcing quality ingredients is a must, don't be tempted to buy "off the shelf supermarket brand" spices as you will not get that authentic aromatic gravy. Great upload and keep up the good work.
Thank you so much for all your advice and suggestions. Really appreciate your lovely comment 🙏🏾
What is difference between chicken vindaloo and chicken with gravy?

@@anissayani4984 hi, there are countless variations of chicken curry with each region having their own unique style of making it. This is one such variation, typical to Goa .
@@CurriesWithBumbi sorry I didn't do it.
Marvellous, thank you. I love your voice, so soothing and sweet.
Thanks
I have made this Chicken Vindaloo today. OMG!!!!!!. It is absolutely outstanding. Better than any restaurant one we have had, (honestly). Is highly addictive. You are a genius Bumbi. I served it with basmati rice, kachumber, roast potatoes and naan. Just so amazingly delicious. Thank you so much yet again. Is actually the (12) amazing recipe I have made from your fantastic channel. I missed out the peas pulao in my counting, which is delicious. Have a lovely weekend and take care xxx
So happy to hear that. I like the combination of your side dishes as well. All credit goes to you Emily. I LOVE YOUR VOICE!!! You have an amazingly calming, genuine, and lovely voice. Please never stop these videos! 🥰
Thanks
I love spicy food, this recipe is the best ive had so far!! 😋
Glad to hear that. Thanks for sending your feedback.
Another hit! The restaurants in my area often add potatoes in the gravy, so I did as well. I parboiled them as I find potatoes don't cook well in tomato/acidic sauces. Flavour was same as what I've had at restaurants. Better than some, even. Thank you!
I am so happy that you put your own twist into the recipe. Thanks for your feedback.
WONDERFUL RECIPE. VERY WELL EXPLAINED. THANKS FOR SHARING IT. KEEP UP THE GOOD WORK. 👍
OMG that looks good! I love your videos. Your voice is as calming as a meditation. For this reason, for vegetarians or vegans, it is also worth watching the video. ;-)

Hi Bumbi, I made this Vindaloo dish yesterday and it was absolutely awesome. My husband found it just as good or better then in a restaurant. Thank you so much for your wonderful recipes!😊
Thanks to you for trying this recipe. All credit goes to you.
I’m Mexican and we have a dish almost similar to this one but with more types of chilis and watching this made we really want to try this recipe because it looks so so good and simple :) thank you for sharing your recipe!
I love Mexican food and even follow recipes from chefs like Rick Bayless, Pati Jinich. I find a lot of similarities between Indian and Mexican cuisine with the inclusion of chillies and cumin powder. Please may I know the name of the dish that you feel is similar to this one? Please try this recipe and send me your feedback. Thanks.
@@CurriesWithBumbi I’m not very sure what it’s called in Spanish but it’s a chicken adobo dish with guajillo ,acho and chipotle chilis and many seasonings:)
So cool 😎 watching u 2 chat lol ❤ from straya

Wonderful 👍recipe. Had it once before on a visit to Goa. Must try your recipe very soon
Thanks 😊
Prepped this yesterday so I could marinate the chicken thighs overnight. Just finished cooking this and it is delicious, I'll probably add more spice when I make it again but I really appreciate that you didn't make it super spicy. I'm looking forward to having the leftovers tomorrow, I have no doubt that like you said it will be better the next day! Thank you so much for yet another delicious curry recipe (we've now made the keema curry and the all purpose base masala). We're never ordering Indian takeaway again thanks to your excellent recipes.
Thanks so much for trying my recipes 🙏🏾

This is an excellent recipe! I've done it many times. First time I followed it to the letter, later I improvised and tweaked it by adding a bit of base gravy, more water or stock, or extra tomato puree, or even veggies like potatos, chickpeas, cauliflower. No matter how you bend it, this recipe always come out super tasty!

Ive never made Indian food but thankfully someone in a card shop someone (in Nebraska) was eating indian food and it inspired me to try it. Now my old boss from a pizza shop started an Indian restaraunt in my hometown far from nebraksa and eating the vinadaloo tonight made me search for your wonderful video. It looks excellently delicious, cant wait to try it plus you have a really nice voice over for the video. Cheers!

Lovely
Brilliant!
This is my favourite curry now. Brilliant 😁
So happy to hear that. Thanks for leaving a comment. Please do visit my channel page playlist for more recipes.
Just made this and it is delicious. One of the most balanced Vindaloo recipes I’ve tried. I did kick up the vinegar a bit because I like a little pungency to the flavor of a vindaloo, but I added some sugar so it wasn’t too sour. It turned out perfect, and I will definitely be making it again.
So very happy to hear that. Glad you liked it. Thanks for your lovely feedback. Please do visit my channel page playlist for more recipes.
Fantastic recipe, I had to make it tonight after drooling all over myself watching this video. Turned out pretty well I added some extra hot chilli powder at the end as I like mine I little hotter.
