  • This is my secret vindaloo recipe that I have perfected over many years. This is based on the traditional Goan Pork Vindaloo. See ingredient measurements below.

    MEASUREMENTS:
    For 2kg pork shoulder
    Marination Part 1( whole spices)
    1 tablespoon Coriander seeds
    2 inch Cinnamon
    1 teaspoon green cardamom
    1 teaspoon Fenugreek seeds
    2 teaspoons Cumin seeds
    2 teaspoons Mustard seeds
    2 teaspoons whole Black pepper
    Marination Part 2((Aromatics)
    1 cup White vinegar
    15 cloves Garlic
    2 inch ginger
    3 medium onions
    1/2 teaspoon turmeric powder
    1 1/2 tablespoons sugar
    1 1/2 teaspoons salt ( adjust the salt accordingly to your taste)
    10 -12 Kashmiri dry chilies ( de-seed them or use less if you like less spice ) or 2 tablespoons Kashmiri chili powder

    I have made this recipe 3 times already. I have another batch marinating with pork. This recipe tastes as good as it looks. Definitely the best vindaloo I have ever made.

    SIMPLY AMAZING!!! I did it , marinated it for almost 24 hours, just added one tablespoon of dried (ground by me) birdseye chiliies to make it more spicy as i had heard kashmiri chiliies were mild. It came out very spicy as I love it. this is confirmed my favorite Indian dish and I thank you for the beautiful recipe and teaching me how to do it.

      I scaled it to 1kg, and added 6 Arbol peppers, without seeds, for a bit more heat. I also added 1/2 tsp cloves. Marinading now.

      @@SharMissCooking so the recipe really uses a whole cup of vinegar? And how much water did you add in the blender?

      ​@Thomas-fp9mm yes my recipe uses a cup of white vinegar. For water add only as much needed to grind properly i to a paste. I have probably added half a cup of water.

      SO I made it! Currently marinating but as someone else said, mine is not nearly as vibrant red as yours. I used Japones peppers because that's all I could find dried and I added 10 of them. Could I add paprika for color?

      @Thomas-fp9mm I think it should turn out fine if you add paprika for colour. But do add the chiilies which you already have. Otherwise flavour will not be balanced. If you can get your hands on for next time you can also add degi chilli powder or kashmiri chilli powder.

    There are so many wonderful dishes from India, but Vindaloo has been my favourite and always go to when I am cooking an Indian dinner. This dish looks perfect I really do wish that we had the technology to be able to smell the marinade through UA-cam.

    perfect, my dad is from India and i made him a pork vindaloo the other week, it came out very good and he was very happy with it, but i am defiantly going to make him this one next time, it looks perfect.

    So I finally made it! Last time I had a small problem and couldn't finish it but I made this! It definitely took some adjusting the spices (I added probably a little too much ginger) so I added more cumin, smoked paprika, cinnamon and coriander to mellow it out, and because I love those flavors. It ended up being orgasmic! ❤ thank you for this recipe! I cannot ever eat vindaloo at an Indian restaurant again because this is so much better than I was expecting. It was also hard to find some of the spices I was looking for, so for any Americans out there, may have to buy some Chili's and spices online

      I used the same measurements as described but also smoked paprika instead of chili for the kids added a little bit of chili flakes. It's seems like I have a lot less sauce as in the video. Well now it's marinating so I hope for a good outcome.

    That looks absolutely beautiful. My dad loves a "proper" vindaloo and it is seems difficult to find somewhere making them authentic where we live. I'm actually going to give this a try for him!

    Tamarind is a must as is toddy vinegar this is the vinegar of Goa.. More chillies remember south Indian food is hot.. Goan food is incredible and it's favourite ingredient, vinegar, makes the food sour and spicy.. I lived there and Goa is my fav food of India.. The people by the way are the nicest on the planet 🙂 भारतीय लोग भारतीय भोजन

      @@mariandavis7953 I live there now at last🙂My recipe has 20 Kashmiri chillies and 20 cloves of garlic. Pork shoulder and marinaded overnight. This is not a dish for people who have no idea about South Indian food however it's not as hot as you think.. The vinegar is the heat it brings out the heat of the chilli.I can share and give you a recipe right from Goa..The lady who gave me this is in her 80's and she is fab!!!

    I can almost smell those spices toasting. I will make this soon, especially as it has no potato chunks, unlike most Indian restaurants in Scotland. I asked a waiter once why the potato, and he replied it is part of the recipe, as potato is "aaloo" in Hindi. Portuguese for garlic is "alhos", and this is the true origin. I would eat at Indian restaurants 2-3 times a week (there were over 200 in Glasgow), but moving to Northern Ireland for work over 40 years ago had to learn to cook for myself - not one Indian restaurant.

    I make my vindalho with malt vinegar and don't use any ginger. I use only garlic. Comes out awsome.

    I've managed to finally gather all the ingredients I need to have a try at this delicious looking Vindaloo. I'm going to follow your recipe to the letter and even going to try to leave it once cooked to eat a day or so after. I think the latter part may me a bit challenging!

      @DaveandGinny972 glad it came out well. The quality of the chillies may vary the colour. Try adding dry Degi chilli or powder if you can find them.

    So, I made this, with some modifications, with chicken thighs. My son, his wife, and I are not big pork fans, even though it is traditional.
    I left out coriander, cardamom, and fenugreek -- I've been told Goans leave them out. I added cloves.
    Instead of vinegar, I used tamarind water, reconstituted and strained from a small block of tamarind paste.
    I used 6 Kashmiri and 3 Arbol chiles per pound of meat.
    Biggest, likely controversial, change: I rendered the skin and excess fat from the chicken thighs (basically, made Schmaltz) and caramelized the onions in that.
    My son, his wife, two friends, and myself found it amazing.

      ​@SharMissCooking Yes. I've stated making a point of using the rendered fat from any meat I'm frying to fry with.
      So, I buy skin-on, bone-in chicken thighs instead of skinned, boneless ones. As a bonus, the bones go in the pot for more flavor.

    Bravo you are right pork on the fork for vindaloo, mother used to use pork shoulder and she also did overnight marination

    This looks great, with a focus on flavour compared to what passes for a vindaloo here in the UK - which is often just a generic lamb or chicken curry with extra chilli powder added to it. There's a whole tale of the evolution - basically Bangladeshi chefs in the UK trying to recreate an authentic Vindaloo based on descriptions given by their customers, and assuming the "-aloo" ending meant the dish had potato. Being Muslims, they didn't make it with pork.
    I'm going to give this one a try as soon as I can. Thanks.

    I love very spicy food and i love pork. That's probably why vindaloo is one of the best things i have ever tasted.what you did here seems beautiful. Will try soon your recipe i guess. So far i have only had vindaloo in restaurants and i loved it, so tasty and very very spicy(the one i tried)

      @@SharMissCooking SIMPLY AMAZING!!! I did it , marinated it for almost 24 hours, just added one tablespoon of dried (ground by me) birdseye chiliies to make it more spicy as i had heard kashmiri chiliies were mild. It came out very spicy as I love it. this is confirmed my favorite indian dish and I thank you for the beautiful recipe and teaching me how to do it.

      You're right! But it needs to pack a punch too. As well as super hot but bland vindaloos, I've had lovely vindaloos but very tame in heat... You don't buy vindaloo if you want a mild curry lol So yeah It's got to taste great and slap your senses.

    We used to have a Goan restaurant here in Melbourne, Australia. Whist their vindaloo was hot, I have had hotter (last Saturday I had a goat vindaloo that rocked my world) but in the Goan place, the left all of the spices whole. They were stewed to perfect tenderness, even the black peppercorns and it was the best vindaloo I ever had in the 35 years since I first encountered it. Biting into a full green cardamom pod, however well cooked and however much chicken thigh and rice you also have in the forkfull is, as Ween said, a real trip triP trIP tRIP TRIP!!

    OK, Here is the heads up, WOW NICE, first time ever trying pork vindaloo, have not even try a super marker jar.....they call them Pataks in Australia. i might just cut the bitter seeds out for next time but other then that............... very tasty and thank you for the recipe.

      The portuguese used Wine and Garlic to preserve meat, that where the name came from. But this dish was completely transformed by India using spices and chilies 🙂

    I love vindaloo. Had it from many different restaurants and I’m gonna make my own from your recipe. One of my favorite vindaloo dishes had some kind of green leaves in the marinade, I’m guessing they were probably curry leaves?

    Vindaloo is one of my all time favorites. Absolutely delicious AND easy to make at home, and the only less common spices are the kashmiri chili and fenugreek.
    I also like to add some black pepper and a bit of sichuan pepper to the marinade and roughly chopped red bell pepper and red onion as it stews so it's not only meat in a sauce.

      Hmm. "Pukka" translates as "genuine". Would it be more authentic with tamarind paste or water (from steeping tamarind) as a souring agent instead of vinegar? Or, are they used interchangeably in Goa?

      You will still need the vinegar but need to balance out the sugar and vinegar, based on spiciness of the chillies

    I’ve made this recipe, with a few minor adjustments to my taste. I actually prefer lamb or chicken, but the pork is good too. Plus, the chef is very attractive too! 😉👍😂
