- These vanilla souffles are simply out of this world. So fluffy with a mousse like texture, almost melting in your mouth, light and airy and full of vanilla flavor. Such an amazing way of finishing your lunch or dinner.

Ingredients
Makes 4 servings
4 large eggs, separated
1 1/4 cup (300ml) milk
5 tbsp (50g) flour
3 tbsp (45g) sugar, for egg yolks
2 tsp (10g) vanilla extract
1/4 tsp (1g) salt
3 tbsp (45g) sugar, for egg whites
For coating the ramekins
softened butter and sugar

I made this recipe yesterday and today for dinner !!! Out of this world 😋 only thing is that they collapse around 3 minutes later
I couldn't get my soufflé to rise, so I turned it into a pancake.
Did you put enough sugar on the ramekin after you butter it because the souffle needs it to grasp and rise up. Also maybe you could have over folded the egg whites into the batter and that can cause it to deflate.
:))) give a try to this recipe and let me know how it works
Recipe is solid, only issue I has was with the ramekin in moving the sugar around as I was worried about putting too much along with the melted butter coating(they don't melt it in the video). Oh, and i tried this with a 12 oz ramekin and a 1qt rameking (1qt=36 oz) with the 12 oz rising well with some odd lines appearing on it(not cracks, they were like yellow lines that made it puff out kinda like a muffin in couple places) and the 1qt rising just fine.

I just made them and WOWOWOWO they r wonderful. I added 1tspn of vanilla bean paste and 1tbsp of butter during the cooking of the milk and pudding and wow made a big taste. They rose nice and tall and golden brown. It was a hit at my dinner party. Thank you a recipe that actually worked. Two thumbs up!! Bravo. If i can only load up a pic to shiw your viewers how beautyful they came out.
