Wow, this aired in November 2011; looks like it was filmed last week. That's the *good thing* about shooting a series with quality equipment and a good crew ... the episodes will always look sharp and crisp.
I'm watching because I've never had success with souffles. Never. And they are so elegant and fun.
I am a 76 year old bloke who would love to see one person recipes that I could cook rather than dreaming and imaginating (not sure that is the right word) about.
I understand that Martha’s soufflé recipes might be difficult for a inexperienced cook. But there are lots of recipes all over the Internet that I’m sure you’re capable of making. If you take it one step at a time and lay out all the ingredients... Get your utensils, pots and pans or whatever you need. Also if you measure all of the ingredients first and have them ready to go... You should be able to do it.
What’s the worst thing that could happen? Some thing is a little burnt on the bottom or perhaps a tad dry? You’ll learned from your mistakes and it will definitely be easier and taste better... When you give it a second go. Good Luck and stay healthy. 😊
This recipe is more simple, you could even buy a bag of Cabot grated cheese if you don’t want to grate the cheese yourself and use an electric mixer to whip the eggs. I’m sure it would still be delicious

I was hoping to see the pumpkin souffle on here. I haven't made in probably 10yrs or so (bc i love to cook but hate to bake lol) so its pretty involved for me. I dont really have the time anymore. ..kids etc. Anyways.. i made it a few times with her creme anglaise recipe for Thanksgiving a couple times. It was always a hit n a really nice change from traditional pumpkin pie. I highly suggest it if u are looking to be a hit during the holidays n impress everyone..i even impressed myself with that one😂
Too bad Martha doesn't live next door to me so she can bring me some of those yummy dishes she makes.

How many egg whites for caramel souffle? You never mentioned the number. Also do you use convection oven for both caramel and lemon souffle? Where is the recipe for raspberry sauce for lemon souffle?

Issues with tax payments?
That many eggs -11 egg’s whites in the cheese soufflé and that many expensive cheeses means this is too rich for everyone I know. Too rich in diet considerations and, Martha, who can afford almost the entire carton of eggs for one meal? We seldom have our own herd of chickens.
On the other hand, I’d love to eat it in a restaurant, and the other soufflés too.
