Maultaschen - A Swabian Dumpling

So here is the recipe, which I copied verbatim from Sigfried Ruoß. This is a bit easier.
The Pasta Dough (yes, we used a little less)
400g (10.6oz) Flour
4 Eggs (large, I guess)
1 teaspoon of salt
1 Tablespoon of oil
Filling for the Maultascha (Mautaschen)
2 old rolls or about 150g (5.3oz) 'stale' white bread
2-3 Eggs
200g(7oz) of ground meat, half beef or pure pork OR sausage filling
100g(3.5oz) Smoked bacon
2 Onions or shallots
1 bunch of parsley
400g of frozen spinach. Not sure if you can use canned, try it, I guess?
Directions:
Soak the rolls or bread in warm milk, and squish them finely. Pan-fry the cut onions, parsley and bacon on high heat for a short time. Mix with the rest of the ingredients and the thawed spinach to a fine paste.
Lay out the rolled out pasta dough on a table covered in flour. Cut it into 10x15cm (3.9inch x 5.9inch) rectangles and brush some egg white on the borders. Put the filling on the lower half and close like an envelope.
Cook in lightly boiling salt water (or stock) for 10 minutes.

Hi ! This is a lot of Work - but wonderful meal. Swabian People like to eat to the "Maultäschle" a potatoe salat - just like you have done in another Video ... Thank you for the recipe !

I like the look of this recipe. Will have to find a beef equivalent of the bacon - I think garlic beef sausage should work. I'm imagining the combo of soft yet firm pasta with the savoury umami of the meat, onions and herbs. Lush.

I gave making these from scratch a shot once - while living in Ludwigsburg. Way too much work - whereupon I settled on Settle.

We almost quit halfway through cooking. Tough meal, especially while filming. Well, they might not be the prettiest, but certainly turned out delicious.
If you've got left over Maultaschen (you sure will with these amounts), you can slice them into pieces and fry with some eggs the next day. You can also vacuum pack and freeze them for later.
