A Vegetable Lasagna Recipe

- Hey there, here are the ingredients!
General:
Lasagna sheets
Vegetables:
1 Onion
1 or more cloves of garlic
1/2 Zucchini
2-3 Bell peppers if you like in different colours
A couple of mushrooms
1 Leek
Root vegetables like Celery root, Carrots, Parsley root
and a couple of fresh herbs like parsley or dill or whatever you have
Sauce Béchamel
30g/~1oz each of butter and flour
1/2L /2.1cups of Milk
Salt, Pepper, Nutmeg to taste
Tomato Sauce
Now, this isn't the traditional tomato sauce as per the French base sauces,
however, it fits quite nicely with this dish and adds quite a bit of flavour.
800g / ~28oz tomatoes
1-2 tablespoons of tomato paste (to thicken the sauce)
1 tablespoon of sugar
1/2 onion
1 garlic clove
Marjoram, Thyme, Oregano to taste
Paprika powder
Nice dash of dry red wine, if you like (or water)
olive oil for frying
salt, pepper to taste

Looks great--love lasagna! Going to use some plant-based cheese and oat milk as I have a family history of Cancer so need to avoid the estrogen and possible BLV in dairy. Thanks so much for sharing
Thank you! Had to look up BLV, sounds concerning but luckily doesn't seem to be much of a problem here in the EU. While I couldn't live without cheese I have to admit, vegan cheese has come a long way, hasn't it? My wife has a recipe for bèchamel sauce, where you use white almond paste, its cooked with some water and seasoned the same way, tastes really great.
