Senfeier - German mustard Eggs

Here are the ingredients for the Mustard Sauce, I think you'll figure the eggs out yourself:
-40g (1.4oz) Butter
-40g (1.4oz) Flour
-50g (1.8oz) mustard (Dijon, regular, whatever you like)
-1/4L (8.45fl. Oz)Stock (Chicken or Veggie)
-1/4L (8.45fl. Oz) Milk
-Salt, (white) pepper
-1 teaspoon lemon juice
-small bunch of chives, chopped
-some sugar if you like

Eggs and mustard? Sounds good to me. I am already familiar with deviled eggs, so I am prepared to hear more. A little mustard is good in all sorts of things we wouldn't expect. Food from India taught me that. I want to hear another tale, so I am subscribing.

Remember cooking this dish in a tiny Finnish cottage in the middle of winter (-20 C outside) on a wood-burning stove for my pregnant wife. Good times.

Firstly, may I say your dunking technique was excellent - dunke schoen, shall we say.
Secondly, this looks lovely, and I will try to make this myself. That said, I will more likely make scrambled eggs to go with that delicious looking sauce - I prefer soft-boiled eggs normally.
Dunke schön! Yeah, I usually prefer soft boiled eggs as well. The sauce goes well well with fish, cauliflower, roasts and eggs in general, according to my early 80's cooking book.
@@KitchenGuy Excellent - I figured it would go well with fish, for certain. Mustard sauces have a nice, light flavour that works well with it. To be honest, it's a shame that sauces seem to have fallen out of fashion these days with cooking in general. I love that aspect of French cuisine in particular. Good to know that German cuisine has it too.

We have do basically the same dish in Denmark we just call it shitty eggs because it used to smell around easter or something like that.
