Rotkraut - German Red Cabbage Recipe

- Hey there! Here are the ingredients:
~800g (28oz) Red Cabbage
1 untreated juicy Orange (Navel, maybe)
1-2 Apples (Belle de Boskop)
1 small potato
2 small/medium onions
50g (1.8oz) of Lard or Vegetable shortening or other rendered fat
350ml (1.5 Cups) of dry red wine
2 Tablespoons of red wine vinegar
2 teaspoons salt
Sugar to taste, start with around a tablespoon and later season to your liking to get the right amount of sweet and sourness. I trust you, you'll get it right.
Spices: 1 cinnamon bark, 3-4 Juniper berries, 2-3 cloves, 6-8 (white) peppercorns, 4-5 Allspice corns, 1-2 Bay leaves.
Mashed Potatoes:
750g (~26oz) starchy potatoes
175-200ml (~3/4 cup) milk or milk/cream mixture
50g (1.8oz) Butter
Salt, nutmeg (pepper) to taste
Red wine sauce:
deglaze the pan with a dash of red wine and add beef stock, reduce some then add cream and reduce heat, then let it thicken some. If you want to make a "beurre monté" you need ice-cold butter and whisk it into the sauce in small batches until the sauce thickens.
