Roasted Cauliflower on bed of Garbanzo & Kidney Bean Sauce & Sautéed Zucchini/Courgettes and Carrots

    This is a meal to celebrate spring season. All you need is two types of pulses of your choice if you do not have Chickpeas/Garbanzo beans and Red Kidney Beans. And the three C's : - Cauliflower, Courgettes and Carrots. You also need red onions to start it all off.
    Enjoy making this recipe.
    TIP : For best results for the Roasted Cauliflower, boil for a few minutes before adding the dressing and roasting it.
    Ingredients :
    4 Tbs Olive Oil
    3 Tbs Coconut Oil
    100 ml Coconut Milk
    1 Can of Garbanzo Beans
    1 Can Red Kidney Beans
    200 ml Soy Milk
    2 Red Onions
    1 bunch of Coriander
    3 Carrots
    1 Zucchini/Courgette
    Cauliflower Dressing :
    4 Tbs Olive Oil
    2 Tbs Ginger Paste
    1 Tbs Garlic Powder
    1 Tsp Nut Meg Powder
    1 Tsp Chilli Powder (Gochugauro is a good alternative)
    1 pinch of Chilli Flakes
    1 pinch of Black Pepper
    Juices from half an orange, half a lime and half a lemon
    1 Tbs Fig Vinegar
    METHOD :
    - In a blender mix in the garbanzo beans and the kidney beans
    - add in 200 ml of soy milk and then blend it until soft paste
    - Then set is aside and prepare the Cauliflower dressing
    - Add in a bowl 2 Tbs of Ginger Paste, 1 Tbs Garlic Powder, 1tsp Nut Meg Powder, 1 Tsp of Chilli Powder, 1 pinch of Chili Flakes, 1 pinch of Black Pepper, 4 tbs of Olive Oil
    - Then add the juices from the half orange, half lime and half lemon,
    - To add sweetness add the 1 tbs of Fig Vinegar and then stir
    - Wash the Cauliflower (You can either Boil it for a few minutes before adding the dressing and putting it in the oven at this point);
    - Put some baking sheets on the baking tray and spread some Olive Oil on top of the baking sheets
    - Put the Cauliflower on the baking Tray and then add the dressing that you have made, coat it throughout the cauliflower
    - Put in the oven to cook for 40 minutes at 180° C
    - Then peel, wash and chop 2 red onions and sauté in a pan with 4 tbs of Olive Oil until brown
    - Add 1 Tsp Coriander seed powder, 1 tsp Cumin seed powder, 1 tsp Pilau Masala Powder
    - Wash and chop a bunch of coriander and add to the mix, keep on stirring
    - Add the now completely blended garbanzo and kidney paste mixture and stir to cook
    - Cover and let it cook for a further 5-10 minutes and add 100 ml Coconut Milk
    - Lastly Peel 3 carrots, then wash and chop them
    - Wash and chop 1 Courgette/Zucchini
    - Add 3 tbs Coconut Oil in a Wok and Sauté the Carrots as the heat up and change colour add the Zucchini/Courgette.
    - Plate up once everything is ready.
    - First Put the Bean Sauce, then add the roasted Cauliflower and lastly top it with the sautéed vegetables.
    - Enjoy !
