Tasty and Tangy Endive / Witloof /Chicory

  • I first, disliked the taste of Witloof (Endive/Chicory). But now it is one of my favorite vegetables. My Mother-in-law introduced this to me and I'm eternally grateful.
    This is my version - How I prepare Witloof !
    Ingredients :
    6-8 Bio Witloof/Chicory/Endive
    3-4 Tbs Olive Oil
    1 tbs Fig Flavour Vinegar
    1 Lt Vegetable Stock
    2 Vegetable Cube
    Method :
    - Prepare, wash and clean the Witloof/Chicory/Endive
    - In a measuring cup put 2 Vegetable Cubes then add 750 ml hot water
    - Add 3-4 tbs of Olive Oil in your pan
    - Sauté the Witloof/Chicory/Endive, until it browns
    - Keep turning to ensure that it browns evenly on all sides
    - Lift the lid and ensure that your turn all sides
    - Add the 1 tbs of Fig Flavour Vinegar
    - Let the Witloof/Chicory/Endive caramelise
    - Add the stock , then cover and let it simmer
    - As it continues to reduce the water and caramelise add a little more stock
    - Let it cook as the water evaporates and reduces
    - When it reduces and starts to stick to the pan then remove the Witloof/Chicory/Endive, as it is ready
    - Serve with a bed of rice or quinoa
    - Enjoy.
