Vegan Superfood - Protein Packed ChickPeas & Vegetable Curry

    This is one of those meals that does not need an accompaniment but couscous, bulgar or rice could do with it. Check out my other recipes for these. It is a delicious meal to enjoy in all seasons. Very rich protein and superfoods.
    Superfoods are basically extremely nutritious foods that support your health. Superfoods are full of nutrient that deliver mega-doses of antioxidants, vitamins, polyphenols and minerals, thus eating them offers multiple health benefits.
    Ingredients :
    3 Tbs Coconut Oil
    1 Large Onion
    4-6 Cloves of Garlic
    2 tbs Masala Spice Mix (ingredients below)
    2 Vegetable Bouillon Cube
    3-5 White Sweet Potatoes
    1 Tbs Pilau Masala Spice,
    1 Tbs of mixed Coriander seeds and Cumin seeds Powder
    1 Tbs of mixed Cloves and Cardamom Powder
    1/2 tsp Tumeric
    5-6 Plums
    Whole Masala Spice Mix : For Boiling with the pulses
    - Cinnamon Sticks
    - Cloves
    - Coriander Seeds
    - Cumin Seeds
    - Whole Cardamom
    Method :
    - Soak the Black Beans and Navy Beans/Broad beans over night
    - Rinse the beans and wash them
    - Add water in a pot to boil the pulses so as to cook them
    - Mix the masala spices and put in a tea bag
    - Add the pulses into the pot, add the spice mix and boil to cook for about 45 minutes
    - Add 1 vegetable cube while it boils start to prepare the vegetables
    - Peel the 3-5 White Sweet Potatoes and then chop them into chunky cubes/pieces
    - Peel, Wash, crush and slice 4-6 Cloves of Garlic
    - Wash and cut the French Beans
    - Wash and cut the baby carrots into chuncky pieces
    - Wash and separate or split /Cut the Cauliflower into chunky bite size pieces
    - Add 3 tbs Coconut Oil into the pot to heat it
    - Sauté the Onions, add the garlic until it browns
    - Add Pilau Masala Spice, 1 tbs of mixed Coriander seeds and Cumin seeds
    - Add 1 tbs of mixed Cloves and Cardamom, Powder
    - Add the Vegetable Bouillon Cube
    - Add 1/2 tsp Tumeric, stir this together for less than a minute
    - Add the Sweet Potatoes, then the Carrots, the Cauliflower, Plums lastly add the French Beans
    - Add 1 Litre of Boiled Water and let it cook for 10 minutes
    - Add the now cooked and drained pulses and 1 can of Chickpeas
    - Add 1 Tbs of Vegan Red Thai Curry
    - Add 500 ml of Coconut Milk
    - Let it all simmer and cook for about 10 minutes.
    Meanwhile Prepare the Couscous:
    Ingredients :
    100 gms Couscous
    50 gms Sultanas
    Method :
    - I never boil couscous. I add boiled water and cover so that the heat can let it cook
    - Therefore just add 2 cups of Boiled Water and Cover to Cook for about 7-10 minutes
    - When Couscous is ready serve while hot, you can garnish with slices of tomatoes.
