    RECIPE
    Ingredients
    1 3/4 cup (270grams) all-purpose flour
    1 1/2 teaspoon baking powder
    1 teaspoon baking soda
    1/2 teaspoon salt
    6 very ripe bananas, with brown spots all over
    4 whole eggs
    3/4 cup (150 grams) sugar
    3/4 cup (144 ml) vegetable oil
    METHOD
    1. Whisk together all-purpose flour, baking powder, baking soda and salt. Set aside.
    2. Peel and mash banana very finely with a fork or potato masher. Set aside.
    3. Preheat the oven to 340 Fahrenheit (170 Celsius).
    4. Line a 9-inch springform pan with baking sheet. Set aside.
    5. Crack the eggs and place them in a large mixing bowl. Use an egg beater to beat the eggs. After 3 minutes, place in the sugar and continue beating it. Beat for another 3 minutes and place in the vegetable oil. Beat until the batter until thick, turns slightly pale and double in volume. This takes approximately 10 to 12 minutes.
    6. Fold in the sifted flour mixture in 5 batches. Or sift the flour mixture directly onto the batter in 5 batches for a smoother consistency and no lumps.
    7. Fold in the mashed banana.
    8. Prepare a 32-inch (80 cm) long aluminium foil and paper towel the same size as the aluminium foil. Damp the paper towel and place onto the aluminium foil. Fold the aluminium foil and wrap around the springform pan. This is a DIY cake strip to bake cake evenly. You can re-use this aluminium foil several times. I only change the paper towel every time I use this DIY cake strip.
    9. Pour the batter into the 9-inch springform pan. Bake for 55 minutes or until the skewer comes out clean.
    10. Remove cake from springform pan and allow to let it cools completely before serving.
