The softest BANANA BREAD recipe I've ever had. Moist banana loaf

If you’re looking for a banana bread recipe that is super moist and bursting with banana flavour, then this recipe is it! It comes together so easily, and is finished off with an optional topping of walnuts that add great crunch and texture to the banana loaf - so so good!
INGREDIENTS:
For accuracy, I would recommend using the gram measurements provided as those are the exact quantities I use. Cup measurements are given as estimates (based on US cup measurements) to make it easier for those who do not have a scale.
▢1½ cups (339 g) mashed bananas - about 3 large bananas, must be ripe bananas (the riper the better!)
▢1⅔ cups (200 g) all purpose flour
▢2 tbsp (16 g) cornstarch - also known as cornflour in some countries
▢1 tsp baking powder
▢¾ tsp baking soda
▢½ tsp salt - omit if using salted butter
▢¾ tsp ground cinnamon
▢¾ cup (150 g) soft brown sugar
▢¼ cup (56 g) unsalted butter - room temperature
▢¼ cup (52 g) unflavoured vegetable oil - I use canola oil
▢1½ tsp vanilla essence/extract
▢1 large egg - room temperature, size 7 egg
▢¼ cup walnuts - you can add more or less
Bake at 160 °C (320°F) with the fan on (convection mode) for 1 hour, or until a skewer or knife comes out clean. If you don't have a fan function, increase the temp to 175°C (347°F).

Made this cake for Iftar a few days back and my husband and in laws absolutely went bonkers for it. I added more bananas because I just had loads at home but still came out so good. Allah’hummah Baarik everything that I have tried of yours so far has come out so good Alhumdulillah ❤️

Tried this recipe today and I just want to say thank you. Didn’t know I could make banana bread without milk or yoghurt. It came out really nice.
Made this today and totally forgot to put in the vanilla due to my daughter running in the room screaming her head off from falling outside (she's ok) but the banana bread STILL came out SOOOO GOOD! oh and I subbed the AP for cake flour. Beautiful banana bread I make it as well seem like cornstarch is the secret. Ingredients. It’s amazing you’re the only second person I know that add walnuts on top I do too, but I put my in the food processor to get a little smaller the walnuts and sprinkle on top for baking. Only reason I do that because I sell them it looks more like it came from a coffee shop. Love your videos you are such a fabulous baker!

I made this banana bread and it was by FAR the best I've ever made.
I had to make a couple of slight alterations, as follows due to my cupboard being depleted of a few things:
I had no baking soda to hand so added more baking powder.
I had no walnuts, so used chopped hazelnuts.
I had no cinnamon so used 1/2 tsp each of nutmeg and ginger.
It came out amazing. I had to give half away to friends as they all loved it.

After I bake any cakes, I cut them up if I don't plan on decorating them and immediately put them in an airtight container lined with tissue roll papers not forgetting the top!! and then cover with the lid. If I don't cut them I wrap in cling foil. All this so the steam helps keep as much moisture and after it cools inside the cakes are the absolute softest it's wonderful! I never leave cakes to cool out in the open as that creates a crust (although it solftens on day 2, the amount of moisture left already) I recommend!

Just made this for breakfast in 4 disposable mini loaf pans. Just decreased the cook time. Turned out fantastic. Only thing I changed was adding a few little nutmeg. Best banana bread ever. Perfect texture.

Hi Maryam, today I tried your banana bread after searching online for a easy and perfect ones. I was not happy with the previous recipe, it was heavy found it lumpy. OMG your recipe turned out to be exactly how I wanted to be 😄🎉 so pleased with it, so light and tasty even though I didn't have vanilla essance and cinnamon at home so couldn't add it. And I reduced the sugar only added 90gram instead of 150 grms. And only one thing was different from all the other recipe that is adding corn starch in it. As my oven is slightly power full banana bread was ready in 45 mins. I would like to thank you for sharing the excellent recipe. ❤

Maryam!!! Not only I LOVE your recipes and videos but I tried this one and BOY! YOU WERE NOT LYING by saying that you had eaten half of the loaf!!! This is the same situation that happened to me and I had to CONTROL myself and wrap it quickly before eating the ALL thing all by myself! What an ABSOLUTE DELIGHT!!! Excellent recipe, I recommend it to everyone..........again, with the risk of eating it all immediately after baking!
