    You are the first person I have seen or read who understands that the stem is as good as the heart!

      Depends on the stem. I have had nasty bitter ones, but I always at least try to eat them and am often rewarded.

    The blackened ends mean it has sat in cold storage. It is not fresh. I live in Artichoke country. If you use a bread knife, you can cut through the top really easy. Use a pair of scissors to trim off the spikes and you'll have leaves that you can grab without getting poked.

    My first time sewing these I treated them like leaks and was after the stem and heart and didn't eat the leaves. Now I eat the leaves and on the artichoke I eat the delicate leaves rhat are soft and young and the more mature leaves I am eat the soft base. Glad I saw your video using the stems so I knew I wasn't nuts. I only see the hearts in stores in jars so never really knew.

    I like the stems too , but the heart is better I think lol I use bread crumbs and garlic and black pepper and olive oil to wash the filling into to artichoke but I open them and bang them on the counter to sink in the filling. I add water and wine to the pot. I needed to use 30 minutes for two large artichokes. But no warming. I let the steam blast out lol makes the cats jump. During this plague the artichokes look great and no one is buying them lol Americans don’t eat their veggies ! LoL So, there is plenty of great stuff in the produce section.

      Lisa Lovely LPA I love adding white wine to the water 30 minutes is only for the instapot. On the stove it takes an hour. The heart is my favorite. Thanks for sharing. Great response. Yes, people are not buying now. They don’t have the experience with them.

    I've been eating artichokes and so early 70s. Thank goodness I grew up in California. A year ago I realized you could trim and eat the stems. Now I'm going to see if I can find the recipe for paella.
    I am a new subscriber thank you.

    I didn't realize you can eat the stem too! I either relearned this or just now learned this!! 😋 but I cut my artichokes in the front and then I open up the leaves and wash them thoroughly (no bugs etc)! And then I stick them into the cooking pot...(but, now we have an instant pot...so, I will,have to try cooking instant pot which my hubby printed out a recipe for me)!! Yours is probably delicious...that's my guess from how you do yours!! 😎

    I get the feeling you are Irish and married to Italians ? LoL you remind me of my lovely Irish Aunt, I being Italian.
    I just made four artichokes for the first time and pressure cooked for 30 minutes , they smelled great and the leaves came off great but the hearts were so mushy , I could not find the hearts !
    I am guessing 15 minutes. That’s seems what you used , 15 ?
    I stuff my artichokes a lot like you do , but I would add some black pepper too and the stems are wonderful , I usually leave them on the bottom and just cut off the end yucky part, but you have a good idea, cutting them off so they fit in pot flat. That’s not a big deal with my big pot on the stove but my six quart insta pot is a bit tight on space.
    Like you , takes me about an hour on the stove , so the instant pot is a big plus for artichoke lovers , no more drooling at the stove for those lovely artichokes.

    So, 8 minutes the first time and then you added 5 minutes so that is 13 minutes. I have a new 3 qt. and there is no manual button. I'm guessing you chose "Pressure" cook but I did not hear you qualify Pressure cook. You did demonstrate the pressure release knob. Your video is what I am going to do at home with 2 artichokes. I did not own a sharp enough knife to cut an inch off the top. I like the idea of a bread knife. I agree a bread knife should cut right thru that.

      Rosemary Bourne I’ve made them so many times in the instant pot, so yes pressure is correct and I set it on 25 minutes
