I don’t know how I missed one of your videos😱…I just realized an artichoke would be fantastic in my IP…but also I’m like one of your viewers, I use the stem also, by peeling it and cooking it at the same time…tastes just like the choke but it’s for the cook alone 😏 additional dip: aioli 💋

Never throw away the stem. Cut the bottom off, peel the sides, and cook it with the whole artichokes in the pot. It's sooooo good! Try adding some pancetta and freshly chopped Italian parsley to your cheese mixture for an even more flavorful stuffing.

Make them all the time, but never used a pressure cooker. Great idea.

Lived in the Bay area of No Cal right next door to Watsonville--the artichoke capital of the world!! Eat artichoke hearts all the time, but whole artichokes are a hassle. Maybe not anymore since I have an IP. Thanks!

I can’t even think about a stuffed artichoke without breadcrumb. I can’t try this.

just an FYI. A friend of mine told me you could remove the center prickly leaves and the "hairy" part before you cook them. She uses a grapefruit spoon because it has the serrated edges which makes it even easier to remove that stuff. Just thought you might want to try it that way. Hey...taking that stuff out will also let you put in more stuffing!!! In my opinion.......it's a win-win!!!

This is the first thing I made in my instant pot and oh boy... really really strong in the black pepper. I would add a fourth of the recommended amount and no salt if you use the kraft parmesan.

You are amazing!!! I was wondering if these could be done in the instant pot. Trying these soon. I do mine slightly different. Don't discard the stems. Chop some of it and add to the stuffing mix - adds flavor. I also add olive oil right into the stuffing mix and put tomato sauce on top of the artichokes. Do yummy!! Thanks!!!

    🍹🌺Aloha from Hawaii🍍🥥
Just bought 2 large artichokes yesterday & was searching for an instant pot recipe to try. I've always made stuffed artichokes by boiling then stuffing yada yada... I just got an instant pot duo crisp & wanted to experiment... I'm definitely using your method... BTW I hope you didn't throw away the stems you trimmed. Peel then & cook them as well. They are just like the bottoms, the best part IMHO

We tried your recipe tonight and my family loved it. We've always done them just steamed, but I'm sure this is our new goto way of cooking them. Only a short time to do the suffering, and wow an amazing dish.

OMG! The last time I had these was when my Italian Grandmom made them for me. That was a very long time ago now. I was drooling (LOL) while viewing your video. I can't wait to taste them again. Thank you Jeff. Had family over for dinner, served stuffed artichokes for an appetizer. They were a hit. My sister-in-law is definitely stealing this one. I would use a little less pepper next time. And I chickened out on the dipping sauce. I stuck to my usual, Mayo and Mayo/sriracha. Thank you kindly. This was super fun.

im curious as to why you did not remove the purple leaves/fibrous like brush before stuffing? is it just preference. i just think that serving it up and not having to have guests have to go through the mess to get to the heart... although, its worth it! Thanks!!

Just followed your recipe only I used romano/parm cheese on 2 artichokes. For me it was a bit much. It was good. Cooked for 20 minutes. But I don't know if I was crazy about the flavor. Do you think it was because I used the romano/parm cheese? There was very little artichoke flavor.

  • @valexander8891

Jeff Happy New Year to you and Richard! I put my olive oil on by pouring it on top and then rubbing it around the artichoke. When you sprinkle the stuffing over the stuffed artichoke it gets some of it to stick on the sides. I am teaching my 11 year old daughter to make this today and I decided to see you had it online - yay! So much better I was dreading the long wait, I can live with 10 minutes - thanks to you and Joyce!

I would squeeze a lemon or two into the sauce. Trust me on that. I usually do artichokes plain with lemon butter- the lemon + artichokes is a hell of a flavor profile.

Tip that I found on another video... Don't throw away the stem. Cut off the woody part (the hard skin) and put it in the instant pot with the artichoke. If you get off all the woody part it becomes similar to the heart and very very tasty. On the other hand if you don't get off all the woody skin, it's near impossible to chew.

I made these last night for my family--they were so good! I was only able to fit 3 in my pot so I was wondering what size pot you have? I'm guessing my artichokes were just big because they also needed more than 10 minutes. Thank you so much for your videos; you have some amazing looking recipes. I'll be trying more in the future.

You are all correct. Twenty minutes is the right amount of time. I was pretty sure he didn't cook his long enough, and then I saw him sawing away at the choke of the artichoke with that spoon and it made it crystal clear to me that his artichokes were undercooked.

I've tried artichokes once in the pressure cooker and they were very, very good. I was wondering, though, if this filling isn't a bit salty with all that parmesan cheese? My Mom used to mix bread crumbs and the cheese to stuff them with. Either way, you're absolutely right that if our Mom's had used a pressure cooker, they'd have had so much more time to do other things for themselves. Thanks for sharing another recipe! :)

CarS You're right! My mom n grandma added the breadcrumbs too, along with the garlic powder, salt, pepper, parsley flakes n parmesan. They took 3hrs covered in the oven. I just made them last Thursday then got an instant pot Sunday for mother's day, lol... My grandmother was Sicilian btw......🍴

Also I do enjoy your videos but giving more details such as what model you are using, size model you are using would be helpful. I love your videos. I have bought an Instant Pot for Christmas 2018. (I haven't opened it yet). Can't wait to try some of your recipes. I watch videos from a lady that has since passed (Great Depression Cooking). She cooks "depression" style recipes. Everything is homemade of course. She does have a recipe for stuffed artichokes, and when I saw your video, it reminded me of her video. Here is a link to her video - ua-cam.com/video/LZ5g9hfB72I/v-deo.html. I will be trying your video soon. THANK YOU for all your great cooking ideas.
