thanks for the video. I bought a Corsori a year ago and tried one recipe and put in the pantry...Husband got motivated today and said...let's try that pressure cooker thing with artichokes and found this recipe. We are both amazed at how easy it was..Normally artichokes take at least an hr steaming on the stove...YIPPEE!! Thanks again.

I love pressure cooked artichokes. I’ve been steaming them in the pressure cooker on the stove for years and I pour Italian dressing into the hearts before steaming. It will be nice to use my instant pot now for the task. Thanks for the video. Now I’m craving artichokes LOL

i have never tried artichokes have never seen them with the long stem would love to try them
I have never seen Long Stem Artichokes, but I'm going to look for some .... we love Artichokes and I dip mine is butter ... not the healthiest dipper but yummy, the rest of my family dips their artichoke leaves in lemony mayonnaise. I've only got the 2 quart cosori but heck I didn't even know I could use a slow cooker on an artichoke. Thanks for sharing Kathy ... I bet your dinner was delicious.
A lot of folk simply toss those stems, but they are delicious when done as you did them & have lots of nutrients, as well & actually more in them than in the artichokes themselves from what I hear. I belong to many Instant Pot groups and the variance to time for cooking artichokes is from 8 to even as long as 25 minutes. Me, I believe the 12 minute mark is just right for them though. Most of the other cooks I have seen failed to cook them upside down as you did. Our local markets do not ever have the long stems with what they sell. My wife just absolutely loves them with melted butter as the dipping sauce, but I am hoping to try out some other ideas. I do the majority of the cooking for us these days, as I am retired, but she still works. I had never even thought about using the liquid remaining in the pot as a dipping sauce. I like to try out various oils, as well as olive oil. Coconut oil and avocado oil both work well, too. Thanks so much for the video, as I will certainly try your recipe soon to see how much it varies from the others that I have done in the past.

Oh my gosh, they look amazing! When I make them, I just make a simple sauce of melted butter, fresh chopped garlic, lemon juice, and chopped fresh parsley. Being Italian, I love the hearts marinated in oil and vinegar, chopped onion and garlic, and capers. Delish! Some Italians stuff them with canned tuna, bread crumbs, parsley and onions. I like the technique, I stuff mine so I scrape the middle choke out with a spoon and add stuffing before I cook them in my pressure cooker. I may have to try and half cook them and pull the choke out then stuff them and pressure cook. Great video as always!

I tried Jerusalem artichokes a few weeks ago. My partner loves them but I had never had them. I must say I did enjoy them. Never tried the ones you cooked either. They are very expensive here in Australia

Right. The big outter petals are so tough, but they have soft veggie on them, thats what u scrape off. Getting down to the center, around the hearts, people use that part for dips and salads and pickeling, after they are cooked.
They’re way over cooked - they shouldn’t be falling apart like that!
