"Tastes like gnat's piss" is a very common term in the UK, for as long as I can recall (the last 60 years or so). It's used to mostly describe weak beer - Budweiser, Miller Lite, Miller....probably some British beers too!

Actually, I know it sounds weird considering how short a time omelets take, but I'm not as surprised. You don't want to hover around anything if you don't have to, even if just for 60 seconds. In a kitchen 60 seconds is a long time, other things to get to while waiting... But it's easy to get side tracked if you're behind and getting tense.
I'm not saying it's the sign of a pro chef, but it is those very simple things that sort the wheat from the chaff, it's more likely the pressure of the situation than the 'raw' (seriously no pun intended!) ability to make an omelet. I'm also mindful that these people know that not only is this going to be seen by millions around the world, but it's also a chance of their life to work for one of the most famous living chefs, possibly the most.🤷♀
TLDR, Ramsey isn't so much looking for people who can cook basic stuff, he's probably not even looking for people who can cook fairly complex stuff, he'll already know they can. He's looking for people who can do those things in -Hell's- His Kitchen. He's auditioning their ability to cope under pressure and many times, you don't know until you try!

Bad seafood will kill you if it's off. My mate's gf years back used to work for the health inspectors that used to go around restaurants and I remember him telling me, they can go in a restaurant, order a meal (undercover) and if they find anything wrong, they can shut down the restaurant on the spot, for this reason, it could kill someone.
Seafood is *especially* dangerous, in fact the most dangerous for food poisoning. It's so much worse than anything else that, you can get away with eating just about any other food that has gone off slightly and you'll be OK, you probably won't even know you ate out of date food, but seafood is a whole other ball game, very dangerous and god help any restaurant serving it, if it's gone off.
I remember going to one of the most expensive seafood restaurants in Manchester years ago and you'd think it would be OK because of how much it costs - but I was on the toilet *all day* the next day because of eating it. I had the full Monty, scallops, crab, you name it, but don't risk it, from anywhere!
Frozen stuff from the supermarket, you are safe with that because it's frozen and it's relatively fresh, but these restaurants are Russian roulette, don't risk it.

I regularly watch this show here in the UK. It shocks me how these people are "professional" chefs and cooks are, they're appalling. You can find the unedited versions of the show on youtube and Ramsey teaches them A LOT, they are taugh extensively about all of the dishes and Ramsey supports them, and gives them a lot of slack in service. It really shows how bad these "professionals" are. Obviously, it is edited to show the funniest/worst moments.
