    For real for real, this is how I've been doing mac n' cheese for years now. I get lazy a lot and wanna keep it simple, so it's also easy to just add chopped broccoli, etc. make it like a broccoli and cheese or cauliflower or both mashup.

      I Think because the main base is baby spinach which is relatively mild it wont be such a problem and milk can mellow out some strong flavors

    I don't know why people say it looks so gross. It's just green. I've seen worse. Also, this isn't very different from when so mix pesto and pasta with parm.

      They think that stuff looks bad. I once added pesto to my eggs before making an omlet. It looked like baby vomit. It looked so bad it was hard to eat. The taste was fine though.

    Spinach is amazing. It's currently go-to my instant noodle upgrade. That plus some oyster sauce is yum!

    My grandma always made pesto, and she used basil grown in her garden. Now I'm an adult and pesto is my favourite condiment. I use it on everything I possibly can. This video pleases me.

    I appreciate the quick broil because for my taste so many baked mac recipes end up dry. A nice addition would be some nutmeg in the sauce, and maybe a deep green breadcrumb topping flavoured with chives/jalapeño.

    I love that you curse. That’s the one reason I’m subscribing. Because to me that’s the sign of a person who is real. I don’t trust people that don’t curse. A person who curses is just being real. I respect that.

    Add some chopped pine nuts to that final layer of cheese and perfection is achieved. I'd probably reverse the basil to spinach ratio, but I'm sick like that.

    You can add all the milk to a roux and you'll get no lumps ever as long as the milk is cold when it's added. Cold milk = no lumps.

    Using it in this application, does it make a difference if I shred the Cheddar myself or purchase pre-shredded?
    I know the cellulose coating can affect some recipes negatively, but I was wondering if it even mattered for something like this Mac and Cheese.

    How can you just broil it when it comes out of the fridge and be hot inside?? Shouldn't we bake it at 350 for 20 minutes or something, then broil?

    Looks yummy. Why unsalted butter when you add plenty of salt after? Does it effect the roux?

      Always use unsalted butter so you can control the level of saltiness. Honestly, I have never bought salted butter before.

      Yeah, unsalted butter means you get to still have fat while controlling the amount of salt throughout the cooking process

      its hard to tell exactly how much salt is in salted butter as it varies by brand

      maij32 it's also like... for example: not using ramen flavor packets because the sodium content is high and uncontrollable so you're better off just salting manually
