I appreciate the quick broil because for my taste so many baked mac recipes end up dry. A nice addition would be some nutmeg in the sauce, and maybe a deep green breadcrumb topping flavoured with chives/jalapeño.

Using it in this application, does it make a difference if I shred the Cheddar myself or purchase pre-shredded? I know the cellulose coating can affect some recipes negatively, but I was wondering if it even mattered for something like this Mac and Cheese.

I Think because the main base is baby spinach which is relatively mild it wont be such a problem and milk can mellow out some strong flavors

Always use unsalted butter so you can control the level of saltiness. Honestly, I have never bought salted butter before.
Yeah, unsalted butter means you get to still have fat while controlling the amount of salt throughout the cooking process
and subtracting from the salt you would have added later doesn't do the same?
