Just a side note to my previous comments. I met a person who I rented a summer place for my family on a lake in New Hampshire back in the 80's. He was an Italian American (Ritchie Leone). I'm not Italian. We became dear friends. In addition to becoming a very dear friend, he and his wife, Jean became "adopted" grand parents to my two daughters. That wonderful relationship lasted for about 15 years until his unfortunate death. I loved him and his wife like family. He taught me during those years everything I knew, at that time, about Italian cooking. Your channel, which I only discovered recently, brought back many wonderful memories, not the least of which you, Paul looks like his twin brother. You guys cook just like he did. No bullshit...just great food. Love you guys!

Thank you. We used to buy it at Meat Supreme on 86th St in Brooklyn. They would make it up for me with lamb, garlic , cheese and parsley. I miss NY because of the foods I was able to get there. I had to learn how to make my favorite Italian pastry known as Pasticiotti . The best place we shopped was Uncle Giuseppe's in Long Island. As far as where to live we're happy being in St. Mary's Georgia in our nice small quiet town. 😊
Looks delicious can't wait to try it. Though I would be using spicy chicken sausage as I don't east pork anymore. Also I plan on getting an Emeril Lagasse Past and Beyond Pasta Maker for fresh pasta. As always, all my best.

Hi, I'm a 40 years old Italian guy, born and raised in Florence, Tuscany, Italy. You know that "mostaccioli" in Italy are Neapolitan sweets and not pasta. What you call "mostaccioli" in Italy are called "Penne Lisce" (lisce means smooth), and Italians hate them, we have even memes on the superstore shelf completely empty for the covid quarantine with the exception of Penne Lisce who nobody touched them. Then... sausages in arrabbiata? Are you serious? In Penne all'Arrabbiata you use Peeled Tomatos, Olive Oil (we hope it is extra-virgin olive oil, and not... whatever that thing is that... it's so transparent that seems peanut oil ), Garlic (a pair of garlic clove, not so much like you use it), DRIED Chili Pepper (3 of them and very small), and Basil (you use it raw, not fried), not other! If you use sausages for pasta sauces in Italy, remember 1 sausage for every person at the most, and if you use them in sauces don't cut them, remove the skin and crumble them!!!! And that "Marconi tomato" isn't Italian tomato, or at least it doesn't exist that brand here.
I get the distinct idea that you guys and Daddy Jack, back in the day could have one heck of a good time after the kitchen was closed. RIP Daddy Jack.

In Penne all'Arrabbiata you use Peeled Tomatos, Olive Oil (we hope it is extra-virgin olive oil, and not... whatever that thing is that... it's so transparent that seems peanut oil ), Garlic (a pair of garlic clove, not so much like you use it), DRIED Chili Pepper (3 of them and very small), and Basil (you use it raw, not fried), not other!
If you use sausages for pasta sauces in Italy, remember 1 sausage for every person at the most, and if you use them in sauces don't cut them, remove the skin and crumble them!!!!
And that "Marconi tomato" isn't Italian tomato, or at least it doesn't exist that brand here.
