- Like so many chefs in the pandemic, Kissaki chef Mark Garcia needed a plan for weathering the shutdown of his four sushi restaurants across the New York area. That’s where his stellar omakase to-go boxes came in, which became a huge hit. Between the restaurants, his teams make 200 to 300 boxes a night filled with bluefin akami, kamasu with tomatillo, aji topped with herbs and miso sauce, and more.

For real. Going back and watching all these videos over the past year really bums me out that some of the places I've learned about here might even be around anymore. Last time i was even able to cop a sit-down sushi dinner was late 2019. Had absolutely no clue what i was taking for granted at the time...

I've worked with him before, he's the real deal. Hard working, organized, efficient, and knows how to eat. Hallmark attributes needed to become a good chef.

I’m Asian American and love love sushi 🍣. When he said he’s Mexican American I’m like 👍 awesome... he can bring his own flair. Flex 💪those skills! No culture appropriation here like other cultures.
This Chef and his crew are awesome. Been to his pop-up shop/lab a bit over a year ago when Kissaki was a concept in Manhattan and his OG restaurant in Astoria. Food and staff were always top notch. Hope Mark succeeds through all of this!
I really feel that Chef Mark has a lot of love for his people and what he does. He looks like an amazing hugger, too. I wish I was in NYC to order some of his food. It all looks so delicious.

I was skeptical of the sushi robot but Kissaki was honestly the only good takeout/delivery sushi available during the worst days of the pandemic. I know cuz I tried everywhere, nothing else held up the quality by the time it made it home: thrilled for the success of Chef Mark!

What an interesting story...a successful pivot in business, leaving one to wonder what will happen when things open up again. Chef seems to have his head on straight and I share his hope for 2021. And, yes...perfect framing with the "halo"...ha ha!

He said it is part of the whole concept a classy boxing. I agree the packaging sells the luxurious concept. C annot see that art package in a clamshell styrofoam plate! Allows for a pricier asking price.

I think the industry will be irrevocably changed, there is no going back to pre pandemic times. Delivery will be an accepted standard, especially as higher end restaurants find interesting solutions to allow people to recreate that experience at home. Places are using beautiful disposable packaging or nice reusables like tiffins. To go will naturally be apart of Michelin starred places. Also now I'd really like some of his sush
