I really like this chef. You can see when he is prepping that he is truly passionate about food. And he has such an appreciation for his staff. Much respect.
This is what actual high level dining looks like. No screaming, no swearing - just a bunch of very, very skilled professionals orchestrated by a passionate, talented and hard-working head chef.
@Mateo L Of course! However I do believe that due to the "celebrity chef" FAD that has been going on for the past 20-30 years there has been a mass distortion of the public's perception of fine dining. I mean to say that they see fine dining as some sort of ultra high-heat, swearing and cursing filled environment, whereas in most cases it is actually quite the opposite. If you absolutely have to swear as a Head chef that means that you have LOST control, not that you are IN control. That is what I meant to say.

Kitchen staff are incredible. 9AM-6PM making pasta in the basement, every day? That takes a different type of dedication. Much respect to all cooks and chefs!
That chef is an example of what makes being human so beautiful. He is passionate about his craft, so welcoming and enthusiastically shares it. Love the video!
Absolute magic. You must love those who love what they do. Their passion is what makes the world spin when the rest of us are too tired to push. These are very special people. God bless them one and all.
I love when people love the little parts and pieces of what they do-- the pure excitement that Chef Secchi had when sharing the sea urchins shows how genuinely and lovingly a person can appreciate food down to their individual ingredients!
This guy is my favorite chef I've seen on this channel. He is so involved with not only his staff, but also the camera crew. You can tell how much passion he has for his craft and it is a delight to see.
I felt so happy when I saw they had a chart with the food allergies of the tables. As someone with food allergies just seeing that extra step makes you really appreciate the care and dedication they put into their craft.
This is a chef that LOVES food. No surprise the restaurant is exclusive. I love seeing people so passionate and into their craft, and encouraging others to do the same. Bravissima!
This ENTIRE video makes your heart and soul light up and, then, when the sea urchins are delivered, he takes his passion and enthusiasm to a different level - thius inescapably making you fail in life with him and his VERY CONTAGIOUS zest for life!!
Love to see guys like this getting showcased. Whether its the food industry, a carpenter, a guy picking apples in a field, people like this are just special kinds of people in this world and its so fun to see them share their passion.
The chefs energy is so nice he has an intensity to him that you know he is full of passion but it’s not overly intense that it bleeds into the kitchen and makes everyone feel like they are unable to make mistakes. Seems like he is extremely valuable to the operation.
che bello vedere che ci tiene così tanto alla cultura e alla tradizione italiana. Questa è la nostra arte, il saper che la semplicità è la miglior forma di fare qualsiasi cosa. Il cibo ci cura e ci unisce. ❤
I had the opportunity eat at Rezdora a couple weeks ago. Absolutely fantastic food. Can’t recommend enough. Definitely try the Grandma Walking Through the Forest pasta. Unbelievable dishes.
Thoroughly enjoyed watching Chef Secchi speak about and cook the dishes. An inspiration and very impressive indeed. He has reignited my passion for fresh egg pasta!
bro im a chef too, when this guy said "we have about 20 vendors" my jaw dropped. holy crap that hectic. props to you guys, I hope I can try your pasta one day
I worked as a chef for 10 years, now i have been doing sales for 6 years, this video made me want to work as a chef again. Very cool chef with very appetizing foods!
Any nation can do the same. The spanish, and in some cases the french, are just as mindlessly adherent to tradition and maintaining the culinary status quo.
@sapphire7888 No. People do that about the french, and the spanish as well. Anyone that touts their particular nations cuisine as the best and above everyone else, usually gets slagged. If it seems like italians are getting the worst of it, it's usually because they're the ones making the most noise, by being utter arseholes to people that don't cook some kinda pasta dish or whatever else italian inspired food to their precise demands. Italians, at least online, demand that *everyone* respects their culture, yet they aren't willing to do the same.
he talks to the camera but he can't stop staring at the pasta, literally the way people do when they're in love staring at a person, half the time don't even realise they're doing it... haha so beautiful to watch this kind of passion
I could watch Stefano Secchi make pasta all day. I loved him at first sight since the Eater docu came out but I also love a good Bon Appetit take. Stefano seems like an overall nice guy and I want someone to look at me and light up the way he cracks open a fresh sea urchin. Damn, please take me here.
What an excellent video, shows off the personality and passion of the chef and his staff, the quality of the ingredients and the way they iterate dishes. So cool! Great music too.
The Eater segment he did a few months ago was awesome. Love seeing the passion he has for what he and the team creates. I can't wait to fly out to NY and check the spot out
he is one of my favourite chefs! so incredibly talented and motivated and he giving me chills each time when I am rewatching this video!!! After that I am fully motivated and full powered :)
There is a similar restaurant in Philly called Gran Caffe L'Aquila-incredible food, amazing staff, and just an excellent atmosphere full of love and comfort. 10/10 recommend :)
the cadence of his speech, the way he talks to the camera like he's teaching you what to do, how to do it, his knowledge about the background and history of their menu and just food in general, he's Italian and he tall as well. I don't know if its just me or -- is he hot? He's definitely so hot holy---
Love that he says “we” any time he’s talking about the workplace. He clearly values the team. 💫💯
I had an opportunity to work with Chef Stefeno last summer in Brooklyn... he's truly as nice, knowledgeable, and passionate in person. Bellissimo!
Aw nice :)
Sounds like an awesome experience. Do you still cook?
I was wondering if anyone was going to comment on how nice and regular he seemed for a chef haha

What passion he has. Refers to the staff by name with praise, there’s a personal relationship there. He’s not a boss, he’s a leader.
I'm adding this restaurant to my bucket list, it's a must.

How about the Circus Circus buffet in Las Vegas? It's another "must".
