Master Sushi Chefs Nick Kim and Jimmy Lau of Shuko in NYC

  • Nick Kim and Jimmy Lau are the masterminds behind NYC’s Shuko, a restaurant that plays with the traditional understanding and boundaries of what constitutes Japanese dining. From the hip-hop that fills the sushi bar to the apple pie that caps the meal, Nick and Jimmy are finding a balance between their traditional training with Chef Masayoshi Takayama (of the sushi empire Masa) and their diverse backgrounds. Nick grew up in Los Angeles in a Korean family who had roots in Japan, while Jimmy was born in China where he always helped his mother cook at home. While Nick and Jimmy’s personalities and roles at the restaurant vary-what Nick refers to as the “good cop, bad cop” approach-the two find a balance that complements each other’s strengths. As the two chefs experiment with new flavors and styles of cooking, the seasonality of the ingredients always remains at the forefront of their approach.

      Henry Kook kinda similar to that JK news article where the oriental restaurant chef was recorded slamming slabs of meat on the concrete to soften it up and it was later used for dinner.

      Nah thats just these guys, but really just because these guys pick up herbs off the sidewalk (or whatever) your calling that an asian thing. bruh, this proves you know nothing about asians unless your an asian and you pick up herbs on a sidewalk...

    I went to Neta a few months back after seeing a special on munchies and had one of the best meals of my life. The freshness lingered in my mouth long after I left the restaurant which was a new sensation in dining out for me! I actually approached Nick Kim after and said I saw him on munchies and he was embarrassed a bit which I found very funnny! Cant wait to try the new spot!

      Lance Gallo Properly treated raw fish (as in straight out of the ocean not some dirty lake) in small quantities is actually extremely good for you. The Japanese diet of fish is why they have the highest life expectancies in the world. However like i said you should only eat small amounts as if you eat a lot, and i mean it takes a lot of raw fish, then theres a risk of mercury poisoning-but you would have to be eating really large quantities of fish for that to be an issue.

    I remember having an omakase lunch at Yasuda in New York by myself. Everyone else at the sush bar was chatting and just popping this perfect sushi into their mouths, dipping the already seasoned pieces into soy sauce and not really paying attention, while I was just rapturously savouring each piece in heaven. I so wish that I could afford to have sushi like that (and visit New York) more often; it was unbelievably skillfully made and delicious. The gorgeously molded pieces, slightly warmed by the hand and golden from the glaze. Fresh wasabi. The amazing rice and freshness of the fish were so good. A very worthwhile luxurious treat. I also loved that the chef noticed my appreciation and looked every time I ate a piece that was presented in front of me. One day, Shuko!

    Another Great Episode. I really never though about how uneducated I am until i started watching the Munchies videos. I really need to step up my education game and live more. I am missing out on so much culture and good times. The good thing is, it's not to late. Now I want some Sushi as always.

    im half way through this video and im really liking it munchies!
    so much better than the last couple of munchie videos..i know its a dif series
    but still not what they used to be (saying that im not expecting things to stay the same) not that their bad either still really fun to watch!

    Been trying to describe what people think about going to a sushi place for years. "Like you're in church" is exactly it, well put. Like you need to apologize to the chef for going there or something. It's not church, relax and enjoy it!

    I just had all you can eat sushi yesterday for my aunts birthday ;-; sushi is soooooooo goooooood. And all the sushi places I go, the sushi chefs are always so handsome :3 lol

    Apple pie and wine! It's awesome these guys are giving their own take on sushi. No half-assed "irrashaimasse" imitations at the door either just for looking asian. Substance > style.
    If native Nipponjin can come in and be happy with how a dirty Josenjin and Chugokujin are running a sushi restaurant, they must be doing things right!
