    I made this yesterday and when I tried a bit of the marinade it was an explosion of flavour and spice! Marinated the chicken overnight and cooked over charcoal. It's every bit as good as I'd hoped. Thank you Feed & Teach!

    I've had some fish marinating for 3 days in this marinade. Wow, is this great!! I absolutely love this. I'll be using this with some chicken later this week. It's authentic and amazing!

    I LOVE Jamaican food!!
    I just made this marinade. I gave it a taste and WOW. It will wake you up and slap your grandma in the face! It is damn good.
    I put some of it over some white fish to marinate in the refrigerator for a couple of days. Looking forward to it, and I will let you know.

    Just made this and the chicken is marinating! Used a bunch of stuff from the garden, including some peppers, that are scotch bonnet, and whatever beer was in the fridge. So this is going to be jerk chicken indiana style tonight

    Sadly can't get scotch bonnet anywhere. I have tried. I use habenaro but it just isn't the same. Made one similar to this but I always add to much vinegar.

      Yea...Scotchie has a unique flavour you don't get from other peppers...Try skipping the vinegar and use milder acids like lime, lemon or orange juice, You can play around with it so it fits your taste

    Can I add pineapple juice instead of orange ?
    And can I put pimento leaves also or too much thanks for the answers

      I actually prefer pineapple juice...if your using the jerk seasoning to make sauce or to do a quick meat marinade like 5 minutes pineapple juice is perfect but pineapple has enzymes that break down protein and can make whatever meat you add it to mushy, especially for longer marinades. A work around is to heat the pineapple juice before adding it to kill the enzymes.

    The ginger I can get in California is usually much more thick-skinned than yours and the skin is musty and bitter so I’d scrape or peel mine.

      Yeah. That's unlike most of the ginger in Jamaica.
