This looks scrumptious! Two hours on the charcoal grill …too long for me so thanks for the suggestion to get on grill for the char Smokey flavour and finish up in the oven . I know homemade jerk marinade and sauce is 100 x better than retail bottle. Will make this over Christmas , cold here in Canada so it will have to be oven all the way until spring arrives then I can take out my bbq grill. Nice suggestion to make festival to go with jerk chicken . Never had festival , made Johnny cakes before, came out good. I tried your rice and peas recipe few weeks ago and everyone LOVED it . I will have to practice more JA cooking and stop buying takeout. Thank You for great video 👍👍

Our ancestors invented jerk, and for me, the real deal is made with the smoke of pimento and used to be cooked in sunken pits, just like back in the day. While we don’t do the sunken method anymore, true jerk still needs that smoky flavor. You did an awesome job and it looks delicious, but I personally prefer a smoked jerk over a BBQ-style version. That said, great work as always!

Your recipe is not authentic. Many of your ingredients, while widley accepted and used, are not traditional and have been added in due to mixing of cultures and processed ingredients are now highly accessible.

A little tip for you, have your lid vents over the meat so the smoke is drawn over the meat to get more smoke flavour :)

I use apple wood chunks and works for me. Also use charcoal and not briquettes.

If you can't have the nutmeg just skip it...use a fizzy drink such as ginger ale or apple juice as a substitute for beer to keep it Halal
