Patty Crust
Ingredients:
1 lb. Flour
½ lb. Cold Grated Beef Suet (Butter is a decent substitute)
½ tbsp Sugar
½ tsp Salt (Optional, especially if your using salted butter)
~½ cup Ice cold water
~2 tbsp Egg Powder (Tumeric or Curry can be subbed here but anticipate a flavour change)
Method:
Note: You can chill all the ingredients and bowl for the best result
In a bowl, combine the flour, egg powder and half the cold Beef Suet (¼ lb.). Keep the rest of suet in the fridge to stay cold
Mix to distribute all the ingredients evenly.
About 1 tablespoon at a time add the ice cold water and mix dough until the flour is hydrated and the dough comes together.
Chill dough in refrigerator for about 30-40 minutes
Lightly flour rolling pin and work surface
Remove dough from the fridge and roll out into a rectangle, folding the dough helps to make a neater rectangle.
Remove the second half of the Beef Suet from the fridge and place a quarter of it in the center third of the rectangle
Fold the bottom third of the rectangle over the middle third with the beef suet
Place another quarter of the beef suet over the folded over bottom third of the dough
Fold over the top third of the dough over the beef suet to complete a thick rectangle.
Roll out dough to make a rectangle similar to the one we started with.
Repeats steps 7-11 until all the suet is done
Fold and roll the dough 2 or 3 more times to increase the layers and flakiness, wrap tightly and refrigerate for 30- 40 minutes.
Mince Beef Filling
Ingredients:
1 lb Lean Ground Beef
2 tsp Curry Powder
2 tbsp Chopped Garlic
3 tbsp Chopped Onion
2 tbsp Chopped Escallion/Green Onion/Spring Onion
1 tbsp Chopped Scotch Bonnet Pepper
1 tsp Ground Pimento/Allspice
3 Tbsp Chopped Green Bell Pepper
½ tsp Salt
1 tsp Sugar
¼ Cup Soy Sauce
1 Cup Panade (Simply 3 slices of bread blended smooth with ~½ cup water)
1 Sprig of Thyme (I didn't use it in the video but it's great)
1 tbsp Seed and Chopped Tomato (Not in the video either but it's delicious!)
Method:
Brown mince beef; in a pot add a splash of oil and let it get hot before adding the ground beef, as soon as the beef changes colour remove from pot to another container and place the pot back on the heat
Add another splash of oil to the pot, let it get hot then add the curry powder and saute for about a minute
Add Garlic, Onion, Escallion, Scotch Bonnet Pepper, Pimento, Thyme and Allspice and give it a good saute on high heat.
Add Chopped Bell Peppers and Tomato if your using them and saute for about another 2 to 3 minutes
Strain excess fat from mince beef and add to the pot
Add Soy Sauce and Panade to the filling
Add Salt and Sugar after tasting and simmer for about 2 minutes
Which an immersion blender, blend the filling so its less chunky and more smooth, a food processor or regular blender also works pretty well.
Set aside to cool
Assembly!
Remove dough from fridge and divide if necessary
Roll out dough into a rectangle that's about 3 mm thick.
With a quarter cup measure, measure out the now cool filling (smaller portions are also okay, the measuring cup is only for consistency of portions)
Place filling at regular intervals on the rectangular dough avoiding getting too close to the edge.
Now is the time to add a bit of your favourite cheese
Fold over the long edge of the dough over the filling to form a thinner rectangle then pat out excess air from between the dough.
Use a ravioli cutter to cut out the patties!
Another technique is to cut out circles with a large cookie cutter or bowl, place the filling in the center, fold over dough to form a semicircle and use a fork to seal the edges.
Place on a lined baking tray and bake patties in a preheated oven at 325 to 350 degrees F for 20-25 minutes. - Навчання та стиль

I’ve tried to replicate the pastry on these for years but you can tell it’s 100% authentic from the flakiness and the color of the pastry and consistency of the filling.
Perfect stuff.
For those who don't have egg powder, use half of the water and 1 whole egg (larger the better). The water content in the egg accounts for roughly 1/4 cup.

It's two tablespoons, I was having trouble getting a deep enough colour but if that measurement makes you uncomfortable you can add in increments when your first adding the iced water.

Frankly I'm surprised when people don't know about them. I grew up in Scarborough and there was a shop run by a Jamaican family that sold homemade ones, I miss them terribly. The frozen supermarket ones don't hold a candle to them, but I bet this recipe would be damn close if I can ever find the motivation to make my own.
@@K-Anator I only discovered them like 10 years ago via the frozen ones. I've had store made one's since then & they were definitely the superior.
I'm 49 now & grew up in Atlanta. Atlanta has always, in my lifetime, been a very multicultural & multiethnic city. We had restaurants as diverse as Chinese, Korean, Mongolian, Thailand, Vietnamese, Ethiopian, Moroccan, Indian, Mexican, Filipino, non-Jamican "Caribbean", French, German. Russian. Etc...
But before I moved out of Atlanta I don't recall seeing a Jamaican restaurant; there are definitely some now.
I'm guessing that the Jamaican population in the US has traditionally been concentrated in certain cities and not as widespread as some other groups. As a result those areas might know Jamaican food well but in other areas it has not been a thing or not until more recently.
Who knows maybe it will become as big a dish as tacos, pizza & gyros some day. I think that would be a great day personally.

I think some of the patties in Florida, made by Jamaicans, are the best. I won't name them here but two places are even better that what I've had in Jamaica.

I grew up in NYC ... It was either Colombian Empanadas or Jamaican Beef Patties... This recipe is AMAZING!
I got hooked on these when I was stationed in Guantanamo. Many of the on-base employees were Jamaican and could cook! I still eat them today (I was there in 1984.)
It’ a good try , the crust and thickness isn’t the same as the ones on the island.

I used to live across the street from a Jamaican food place. I would go and get the beef patty with cheese and coco bread every single time I could afford it 🤤 one of my favorite snacks/meals of all time. I feel lucky that I came across this channel. I’ve always been curious with Jamaican cuisine ever since I’ve had those patties (surprisingly, they sell ‘em here in the Philippines). Amazing recipe.
I'm keto, so I use the same ingredients except (and this is the sub for keto viewers):
2 cups wheat flour --> 2 cups almond flour + 2/3 c vital what gluten + 1/3 c whole psyllium husk
And replace the sugar with Allulose for the crust, and Erythritol for the filling. (Allulose helps with crisping the dough).
It came out VERY close to your amazing patty.

I first tried Jamaican beef patty when I lived in Toronto. I loved them right away. The store kept them in a heated glass cabinet with a glass of water in it. I learned to look for the patties that had a red dot on them, those had extra pepper, my favorite. They also sold them with a fresh baked bread bun cut open and put the patty inside. I miss those patties, I'm going to have to make this recipe.

In the 80s when i was a kid i met a bunch if jamacans that came here to pick fruit. They would come back every yr n eventually they became like family to alot of us .we wpuld smoke weed and eat bomb food. Its been yrs since the same ones came back here. Carlton, semi, wonder if they still alive

Most restaurants and frozen patties always either have dry meat, or its way too overcooked that it becomes chalky. This looks like one of those true semi-soupy perfect patties. Wonderful.

This is exactly how the French make croissants. layers of dough and butter folded into each other and repeated. This is how they are flakey, buttery and delicious. I want to make these.

@@skaterlover1999go to your local butcher, they will likely have some. Its cheaper than butter. around 2 dollars a lb in texas. Its hard and melts at room tempature like butter. Its difficult to work with to be honest but its neccessary to get the crust right.
