I have been hooked ever since. Like he said U never get tired of it. Make your own jerk sauce (control the sugar and salt) Enjoy.

The "secret" to real jerk chicken is smoking it with pimento wood low and slow to let the rest of the flavours infuse. You can make it in the oven without smoking and will be close but not the same. Some smoked salt can help with that if you are cooking it in a regular oven...

throwing water on the fire creates steam, not smoke. the water from the steam displaces the oils in the chicken making a less flavorful bird. if you need a small controlled hit of smoke now and again use some small wood shavings like was done towards the end. also, just gotta say, the rub really needed to be applied under the skin.
FOOD SAFETY NOTICE: whilst cooking meats on an open fire, make sure flame is NOT licking any part of the meat directly. Having patches where fire was directly on the flesh causes a certain unpleasant taste for sure, but it is also proven to be carcinogenic.
