I knew it had orange juice in it so that how I searched and found this video. I made this/your recipe a few months ago and would bet money it was 98% identical. Well, I found his password for his email account this morning and found his recipe in an email to my cousin and the only difference was he used rice wine vinegar and red wine vinegar both more and he used habanero instead of scotch bonnet and added cayanne if it wasn’t hot enough. Just so happy to have found this video. 👊🏻👊🏻
I made this today....OMG!!! I followed your recipe to the tee, I just doubled it so I could freeze some...THIS IS SO FLAVORFUL....I'd say it has more flavor than Walkerswood Jerk sauce. I'm never buying Jerk sauce ever again.
@@gamesmaster90 its because ready made marinades will never top fresh ingredients. Even if a simple marinade. If the garlic, green onion, ginger etc is fresh its a flavor bomb

Fan flippin tastic! Marinated chicken thighs and made Jamaican rice n peas for a side. Whipped up a habanero aoili with peppers, Mayo, Dijon, honey, lemon juice and salt to drizzle all over. Best meal I’ve ever made. Thank you!!

I made this but in beef! It tasted like take out!!! 2 scotch bonnet peppers is not spicy enough but you can add more after! Also had no salt in the recipe that is also adjustable! Perfect recipe koopa!

Chris, while on a sailing trip in 2019 passing through Port Antonio we went to Piggy’s Jerk Centre to get some chicken, we asked for the jerk marinate and I got two bottles. One of them I opened about a year ago and it was still good, super spicy and delicious. The second one I still have.
Looks delicious. I'm on a low carb lifestyle so I would be changing a few things here. No Orange Juice - maybe extra lemon & lime juices, substitute the brown sugar with Sukrin Gold or Swerve Brown Sugar alternative. Omit the honey and I can get pretty close flavours to yours. I've got some delicious boneless/skinless chicken thighs I want to smoke on my Recteq smoker and this recipe sounds like an amazing add on. Thank you.
I've followed/read many recipes on jerk and served in TX on the yard bird or just wings, grilled and hickory smoked - NOBODY has complained in 5-8 years. These raw recipes all follow a similar thread. Honey-gave a nice golden crystalline finish too
I followed this recipe and blended in a Vitamix but my marinade turned out to be a light green. I did use a lot more oil. Any suggestions on how to get that nice dark brown color?

A couple of alternatives for sweet balance that I've enjoyed is either pineapple juice or raisins. Not traditional, but adds a different vibe.
