The texture of purple potatoes is perfect for roasting it, and the garlic herb takes it to the next level, I will definitely try this recipe,

Thank you for this simple and delicious recipe. I just found some purple potatoes at a local market and had never heard of them before.

Hi Adrienne, as opposed to eating all these at one sitting, how would the leftovers be stored, for how long, and then re-heated. Thanks !

Greetings, Karl. They can be stored in an airtight container in the fridge. 2-3 days is preferable consumption time but if they are not spoiled and smell okay go for it! I reheat under the broiler in the toaster oven for a crisp exterior but I’ve also used the microwave. Good luck and enjoy!

Humans are able to regulate their own weight. Low carb, low meat, low dairy and more vegetables and fruits. This is exactly what our ancestors will eat. Your body will bring you back to normal again. I am only 4 pounds heavier than what I was at the age of 20. And I am now 59. LOL
