    Paitan Chicken Ramen
    Ingredients
    For the Chicken Broth (Makes 6 to 8 servings)
    4 to 5 lb organic/cage free whole chicken
    3 lb chicken feet
    1 lb chicken back bones
    1 cup sake
    25 cups cold water
    For the Tare (Makes 6 to 8 servings)
    1 oz kombu, dried kelp
    1 bulb garlic, cut in half
    2 oz ginger, sliced
    1 large leek, cut in half, wash it through, prepare only white part
    4 dried shiitake mushrooms
    1 cup sake
    3 cups cold water
    2 Tbsp sea salt
    2 Tbsp sugar
    4 to 8 Tbsp gochugaru, Korean red pepper flakes (optional)
    For the Chicken Meatballs
    2 remaining chicken breast, removed skin
    2 Tbsp unsalted butter, cut it into small pea size
    1 clove garlic, grated
    1 tsp ginger, grated
    1 Tbsp cornstarch
    1 Tbsp soy sauce
    1 Tbsp mirin
    2 Tbsp ground sesame seeds
    1 egg
    1/8 tsp black pepper
    For the Crispy Chicken Chashu
    2 remaining chicken thighs and leg meat with skin on
    1/4 tsp salt
    1/8 tsp pepper
    For the Ramen Bowl (Makes 2 bowls with below ingrecietns)
    10 oz napa cabbage, cut into bite size
    2 portions of fresh, frozen (5 oz each) or dried (3 oz each) ramen noodles
    2 to 4 cloves garlic, grated
    4 green onions, chopped
    4 Tbsp ground sesame seeds

      Man, I totally know what you mean. I've been watching cooking videos on youtube for litterally 10 years now and so here and there I make an incredible meal that took me longer than an hour to prepare. I cook great food, if I can do it in an hour. But when I see these video's where the broth is something I've never been able to achieve on a level where it's godlike. I got that same feeling you have and think to myself. One day, just one day, I will make a broth like that, I will cut up a whole chicken in pieces just to get all the good parts and I will put effort in buying the good ingredients at the appropriate stores, just to eat that one ramen noodle soup I can only imagen this taste like. It will be glorious.

      @@AC21578 so a month later, I made my own chicken broth, just like in the video, I did it twice. And once I made a beef broth. Made some miso soup. And all 3 times I started early in the morning to eat this for dinner. I can tell you, you will not taste ramen noodles like that if an ordinary ramen shop. The taste is so incredibly rich it's well worth the time. After you made it and tasted it for the first time, you'll be motivated to do it more often.

      My brother takes his sweet time making food and soups are no exception. During winter he prepares this GORGEOUS ox-tail broth which takes well over 12 hours...

      @@JB1998DBZ the thing about homemade broth is that you want to spend as much time as you can to let the collagen and fat in the bone of the animal to break down.... that part has the most flavor and also is the part that takes some time (depending on your animal bone) cow and pork bones take longer than chicken bones, and chicken bones take longer than dried vegetables, but the flavor you get from taking your time with making soup is ..... OMG the taste

    Can u give a ramen recipe that will take 30 minute or 1 hour to cook? Coz i'm a student and i don't get that much time for cooking... so a simple short recipe will be very helpful

      Som Som either do some life hacks to instant ramen . Or meal prep noodles as a lot of broth in advance make a fat batch , plastic wrap noodles. And be able to make instant ramen but way better for u

      i know it’s not a recipe but if you don’t find noodles or you don’t like the consistency of the noodles buy angel hair spaghetti, it works just like tonkotsu noodles

    I have made this RAMEN for several times now and it is one of my FAMILY FAVORITES. Even so that they say that it is the best Ramen they have been able to eat anywhere. Thanks for the brilliant video and instructions ...... you have created on steady family favorite!!!!!

    The first one looked really good but the second one, I was all over that.
    Ramen, looks, on the surface, to be such a simple dish but the time and effort involved is incredible. If someone was to start selling ready to go ramen broth, they'd make a lot of money.

    I made this. Took 62 years and I am now old and gray. I have been married, divorced, 3 kids, 2 Fords, a Honda, a Chevy, and my back aches when I rest my bones in the evenings. I’ve seen the world turn and turn and I wonder where we’re all headed. All that said, the ramen was very good.

    Bless you for this amazing recipe. I chose to make this one because of the detail and complexity of the cooking process but the main reason was the story you had about trying it in Japan and the shared passion you have for delicious ramen. Every bit of the final dish was so tasty. The egg was something special. I highly recommend everyone giving it a try!

    Made it today. Omg it took so much time but it's worth it.
    By the time i finished cooking i was so hungry that i put lots of ramen into a huge bowl. Didn't finish it despite it's taste.
    Btw i used shangxing wine and little bit of sugar instead of sake and mirin. Worked good for me. And ramen egg marinated well just in 5 hours. If you fon't have much time don't be bothered.

    do I add less butter when making the meatballs with thighs? or does it not matter. my sister doesn’t like chicken thighs (shocking I know)

      A T Blend the chicken breast with the butter in the food processor, & bake the chicken thighs in the oven (there the toppings) hope I helped 😊

      You won't need yo add butter if you are using thighs for the meatballs!

    what can I replace de chicken feet with? just more chicken? any special part from the chicken?? (cooking this for my family and if they see me putting in the chicken feet in, they just won't eat hahaha, I'm the only one diggin' that stuff after several years loving asian food! love your videos! A fan from Chile.

      Little Sanchez M I’m not sure there’s much you could use to replace it. There’s a lot of collagen in the feet that you’re not going to get from another part besides heads. Without the feet it would be less creamy and more like traditional chicken soup.

      Little Sanchez M probably a good call lol. You’ll take out the remnants anyway so no one will technically be eating the feet. If that helps
