I researched that Chinese Bean Paste she used and saw the ingr used were: Ingredients: Wheat flour, water, caramel color, soybean, salt, alcohol (to preserve freshness). There are haram derivatives (alcohol) used in that certain blackbean paste. Make sure to research or make your own black bean paste, just to make it sure it’s halal.
You're right! You should use all the ingredients halal. I tried to find halal chunjang, the black soybean sauce but I was told by food producers that all halal-certified sauces made in Korea are exported. That is why I made Tteokbokki sauce from the scratch without using gochujang. I think you can get halal sauce where you live. Please use that to make this dish. I should have said that in my video. I have lots of experience in cooking halal Korean food and am still making researches on it. I hope you understand my situation. Thank you for the comment!

Fatty parts of meat are typically used to make this dish, but chicken breast sounds great. I recommend to cut the chicken breast into smaller pieces. Then it won't taste tough. : )

Yes you can. If you add small amount of oyster sauce it'll taste more like a restaurant's version but you may omit it. Make sure to use fresh and nice ingredients and cook it enough time to make it more delicious!
You may try. But make sure the black soybean paste needs to be cooked. I recommend to cook in a medium heat and be careful not to burn onion and garlic!

One large onion medium diced
1tbs chopped garlic
200g medium dices
4tbs cooking oil
1tbs chungjang sauce
1 tb soy sauce
1 tb sugar
1tb oyster sauce
Cook 3-5 min
Add water low heat
1 tb corn starch w 3tb water
1tb sesame oil
Makes 2 portions
