Somjit, I used rice flour and it turned out very crispy, my wife loved it and we finished it all in 10 minutes haha. Rinsing 4-5 times removed a lot of the saltiness, I added some salt at the end. Also some roasted peanuts - makes a great beer snack !

I was told not to wash them S washing would remove the tastiness of the ikan bilis.

The first time I set up my own home and tried frying up Ikan Bilis was a major failure. Didn't know that the head and insides must be removed. I just soaked, rinsed and fried. Ended up complaining to my Mum of the awful smell and taste compared to the bottles she gives me. Well, now we know better. Converted to buying the split and cleaned ones to save time. I don't coat with flour but sprinkle on a bit of sugar after dishing out.
Hi Pretty Catmint I am glad that you have figured it out and don't give up on ikan bilis. I find that coating the washed (wet) ikan bilis with a little bit of tempura flour helps a lot as we don't need to fry it too long and the crispiness lasted up to 4-5 days. Furthermore, there is no oily smell even if we put in the air tight bottle. May want to give it a try. Thanks for the comment.
Add some curry leaves when frying, squeeze in some lime juice when serving... best snack with beer!

Do we need to cool the fried ikan bilis & reheat the oil before refrying a 2nd time?
Hi Chris Chan, No need to wait for it to cool. About 20 seconds you can put it back in the oil. Yes, we need to retain the heat as per the first time frying.
Can we do away with the flour? Is that flour a necessity for fried Ilan bilis ?

Can just use plain flour or rice flour?
My ikan bilis turns chewy instead of crispy. Is it because it's wet after rinsing? Can we use rice flour instead?
Hi shown S. I don't think it's because of rinsing the ikan bilis. If used tempura flour but still chewy. I think you may need to fry it slightly longer and the oil must be hot. Chewy means the ikan bilis is cooked but still not crispy. Fry until brown and remove from the oil, however also be careful not to over-fried it as it can burn. I hope this help 😀

Hi vimal kirti. I used medium heat 6/9, 9 being the hottest. For the time, it is until the anchovies are cooked and crispy, it's take around 3 - 5 minutes, also depending on the quantity of the fish in the frying pan. if cooking just a bit won't take too long. however, if cooking a lot it will take times.
