    The reason that brining a bird like turkey is going to be 1000x more effective than putting it in your "marinade" for 45 minutes is because of osmosis. The water in the brine is saltier than the moisture within the flesh of the turkey. Osmosis is the process where water that has a higher salinity crosses over into a solution of water that has less salt, through a membrane(skin). When this happens, suddenly the water inside the turkey meat is more salty than the actual brine. So the water moves back and forth through osmosis, carrying the seasoning in the brine in and out of the bird until it eventually reaches equilibrium. Now the inside of the turkey meat has all the seasonings that was in the brine.
    This takes over 24 hours.

    You dont have an acid in the marinade. Without it you're not breaking down the proteins thus not making the meat any more tender

    Hey Jack have you ever tried to marinate the chicken in olive oil, lemon juice and garlic. Its a meal from Lebanon that is called Shish Taouk. You just serve it in skewers its just so freakin amazing. And it is pretty healthy ! You should try it once.

    It's been tested and proven that longer marinating/brine times do not increase the penetration of your marinate/brine. You only need 30-40 minutes for any marinate/brine. The actual marinate/brine itself just penetrates the surface anyway and doesn't go much further than 1/8 of an inch deep. But adding heat drives it in further. Plus, since it's on the surface, you taste it when you chew and naturally drive the flavors into the meat.
    Personally, I've pretty much stopped doing the wet marinate/brine all together. There are a few marinates that have to be wet, but usually I just do a dry brine and inject my meats with flavor instead. On a steak, I just sprinkle salt (and/or seasoning rub) onto the steak and let it rest for about an hour. The salt will naturally pull moisture out of the steak and then the steak will reabsorb that moisture taking the salt with it. With chicken, I do the same thing only I use an injector needle to inject a bit of chicken stock or butter into the chicken meat. I find the dry rub/injecting combo to deliver much juicier results without having to literally pour stuff down the drain.
    Oh, I'm rambling again. Sorry. Great video. I'm really getting a kick out of watching through your older videos. :)

      If that's true, why do they say to marinate things like flank steak for at least 4 hours? Are you just talking about flavor penetration, or tenderizing?

    Guess the trick is that osmotic pressure drives the liquid into the meat. This is heavily used in the industry in general to enhance the weight of the product and basically sell consumers water. If the "marinade" is too salty it will force water out of the meat which has been used for centuries as a preservative (wet curing of ham etc., (strongly recommend to use nitrite in addition to regular salt!)). How the flavours enter the meat is to me not clear, as most of these are hydrophobic molecules

    I think all the slap chops are pretty much the same. It's all in what you want it to do. Vince's slap chop is easy to clean so I went with that one.

    This is the best format for advertising your sauce I can imagine. I like making easy food, and having a little BBQ sauce on hand is absolutely required.

    Hello jack, Ive just stumbled upon some of your videos and have to say they are interesting and informative while also entertaining. Basically whats happening, is the salt from the marinade is pulling out all the moisture from the meat, leaving the pores of the meat empty. The now seasoned water penetrates the chicken again via the empty pores. Ok, Im going to go subscribe now :) If you have any questions about other cooking methods etc, feel free to msg me.     I'm not sure if anyone else has mentioned this or not, but this is actually more of a brine and less of a marinade. It's similar to brining a turkey or a pork roast if you've ever done that before.

    I am not a chef. I am a regular guy who has a food company. I love to eat and I love to cook. So I share with people. I wore the yellow hat backwards two years ago and people got used to me wearing it so I stuck with it.

    If your going to cook it as soon as it's done marinating, then leave it out. If your not going to cook right away then refrigerate.

    What you did WAS brine the chicken. Any spice rubs main ingredient is salt. salt + water + meat = brine. I'm sure that chicken tasted great.

    step one: buy marinade from jakatak69 10 days before you make it
    stap two: put marinade in with water
    step three: wait for the mariade to marinade he chicken
