Did you note on the expensive fish, when served up, Josh and Ollie’s beers had a great fresh head. Sonny’s was flat looking, as he’d obviously been into it previously and with oil from the fish, the head vanishes immediately… 😂 😂

As someone who has worked the fryer line in countless restaurants, you DO NOT want to change the oil every day. Fresh oil daily results in bland food and the resulting color of the food is off. Fryer oil is one of those things where there's a sweet spot, not too fresh, not too old. That's the oil that makes the best fried fish. If you don't believe me, Anthony Bourdain has also echoed the same sentiment.

Banoffee Pie, Sticky toffee pudding, Victoria Sponge, Apple Pie - I could go on but next time just say you've never tried British food before you start talking shit about it, we have good food, if you dont like it after eating it then fine fair game but dont talk bad about a countries cuisine, its rude and you wouldnt see us talking bad about yours so have some respect, especially if you havent tried it before. Every country has places that sell bad food, you need to look for good places before you judge like everywhere else.

As a man who's worked in kitchens his entire life. One thing I've learned is that if you drop something that's breaded and fried into oil a second time, it becomes saturated with oil and disgusting. Dont always assume something is better because it's expensive. Ive had a lot of high end chefs tell me the same.
the stuff inside does not heat up quickly enough to generate steam pressure to keep the oil out. But it is possible: fry it first time not too much, then freeze it. Then re-fry the frozen product.

@chrise-ih4ix you're right. There is no such thing as British cuisine. But spending time in places like Turkiye I realised England has something a lot of countries don't. I could walk out my apartment in London, turn left Korean Restaurant, turn right Caribbean Restaurant, walk straight, Nepal restaurant. The restaurant diversity culture is off the map in London and I'm so thankful we opened our doors to different cuisines. Because fish and chips don't cut it🤣

Always entertaining! That woman was VERY well spoken and really added a lot. Neither of you repeating what the other said, just complimentary, was great! I have a suggestion (I dont think its been done yet) but try American North East Blackfish, Tautog. It really makes a unique fish and chips. Not so butter smooth flaking mush, has some texture but still butter smooth. If you really want a rare treat, Blackfish Cheeks. When the blackfish get big their cheek muscles get quite large, like a large scallop. Flavor like no other. Very rare treat indeed.

I doubt the Turkish guy changes to new oil every day. They have a special machine that fine strains the oil at the end of the day. Then raw potatoes are cooked in the oil to neutralize the fishy taste. The batter comes from the Portuguese, it was also brought to Japan by them and became Tempura. Along with the fizzy liquid such as club soda, beer, champagne etc. You can also add a little ice to the batter just before cooking which will help make the batter crispier. Traditionally, they serve with Malt Vinnegar. Halibut is also an extremely nice fish to use for fish and chips.

I doubt the Turkish guy changes to new oil every day. They have a special machine that fine strains the oil at the end of the day. Then raw potatoes are cooked in the oil to neutralize the fishy taste.
The batter comes from the Portuguese, it was also brought to Japan by them and became Tempura.
Along with the fizzy liquid such as club soda, beer, champagne etc. You can also add a little ice to the batter just before cooking which will help make the batter crispier.
Traditionally, they serve with Malt Vinnegar.
Halibut is also an extremely nice fish to use for fish and chips.
