    HERE IS THE RECIPE:
    I fryer chicken cut up
    8 oz. of chicken stock or broth
    1 can red enchilada sauce
    1 jar of mole
    1 celery stalk
    1/2 onion
    1 tsp of garlic
    1 red/green bell pepper
    salt & pepper
    cut up fryer chicken. Season it and roast at 350 degree F for 20-25 minutes.
    put drop of oil in sauce pan. add garlic, celery, bell peppers and onion and sauté. add salt and pepper for taste.
    once veggies are sweating, add enchilada sauce, chicken stock/broth and mole.
    add chocolate chips if you prefer sweetness. Cooking together till incorporated.
    Pour mixture over roasted chicken and place back in oven for a few minutes.
    enjoy.

    I made a *HUGE* batch of this, *divided it* up and froze it *immediately* (as so as it cooled)
    It freezes GREAT!!
    So far mine has been frozen for a year, and it still tastes great and the texture is fine everytime I use a batch.
    I take out a batch the night before to thaw. When ready to use it, I gently and slowly heat it in the micro (2½-3 minutes, power 3, in high powered micro). Pour over chicken and bake as directed in the video. Talk about making quick and easy homemade Mole. It doesn't get any easier than that 😊

    My mom loves this mole mix when she doesn't feel like making it from scratch, since she would need peanuts, bread, chocolate, sesame seeds, spices, chile and other stuff it's a lifesaver available in Walmart or even your local grocery in the foreign food aisle

    always good to be safe. I don't ever want chicken residue on your seasoning bottles. What I do is make the mean. Then grab 409 and a rag and wash each bottle of whatever before putting it back in the fridge or seasoning cabinet. Then wash all dishes. Then wash all cutting boards then counters.

    the Wusthofs are a forged metal. Victorinox is a good knife too. The Wusthof holds an edge longer in my opinion. I live the strength it gives me as opposed to a Japanese steel which is flimsy.

    Many Targets and Walmarts are carrying Mexican ingredients under cultural food aisle (I think its called that way). The great thing about using the Dona Maria's brand is that it comes in a glass and my mom would take off the label and wash it really well and presto! Instant drinking cup :)

    That was jacks knife, he can probably tell you where he got it. but I assume in any kitchen supply store in your neighborhood.

    Mole is the generic name for a number of sauces originally used in Mexican cuisine, as well as for dishes based on these sauces. Outside of Mexico, it often refers specifically to mole poblano. you can find recipe online to make from scratch

    That is my Wusthof German knife. You can get at any cutlery store. Love my Wustofs. they are sharp and strong.

    I've seen many ways to to break down a chicken, but never like this!
    I mean splitting the carcass into halves horizontally before cutting the discrete pieces we expect.... that's a very interesting technique!

    I did clean up the plate, but we run it thru with out editing that part out. But if you notice on the still picture is clean and decorated good catch do reality is like that unforgettable. thank you for your comment.

    I would have never thought of the chocolate idea. I would have used molasses. I gotta try that next time I make something too spicy! Great tip!

    making it from scratch is petty hard and time consuming, you need about 50 ingredients from dried chillis to chocolate, tomatoes, sesame seed, cloves, pepper corns, cinnamon stick, peanuts, pumkin seeds, raisin, chicken broth, or water, lard or veg. oil all the dried stuff gets toasted, the fresh stuff roasted then you blend it run it thru strainer and then cook it at low heat to blend it all together. long process but hey is worth it. good luck and thanks for watching.

    some types of mole already have chocolate in it i don´t see the problem in adding chocolate chips it only adds a sweeter taste to it. The thing is you can´t go lazy on mole cause you are gonna miss the true flavor. Either way looks awesome and fast.
