jack continues his Lazy Man's Series with this great easy recipe. Be sure to post your food pictures at / cookingwithjack
    Here is the recipe:
    Ingredients:
    5 cups of berries
1 lemon, using half of the juice
    ½ cup of granulated sugar
    Recipe:
    1. Combine the berries, lemon juice and sugar in a sauce pan. Mix with a wooden spoon to release the juice from the berries.
    2. Turn the burner to a medium-high heat. Let cook 18 minutes, or until thick, stirring occasionally to prevent the jam from burning or sticking.
    3. Once thickened, remove from heat and let stand about 10 minutes.
    4. After the jam has cooled a bit, transfer into mason jars or screw-top plastic ware.

This is a simple conserve rather than a jam. A jam needs more sugar and should set. The easiest way to get it to set is to add a sliced peeled Bramley apple and bring to a full boil. The pectin from the apple will set it properly.
For a store cupboard product, transfer the sealed jars to a steamer and steam for half an hour. They should store unrefrigerated for a year.

jack, I've had cherry jam for around 12 years now and I just opened it and everything was preserved still. It tasted just as good as when we first made it back in January 2000.

@JustNess78 Mine thickened up but I would probably cook for about 2 more minutes on the stove for extra firmness. Pectin is what people normally use to thicken. I just did the lazier way.

Hey Jack I made Jam Before but I didn't use lemon I used the juice from a sour orange (They are basically Oranges that have a moldy looking outer skin but if you break it open it looks like a regular orange)if you taste the juice it makes you pucker I used it in my jam and the orange gave it more of an Authentic flavor

I am making some but i only had 3 cups of strawberries, i cut the ingredients and its smelling just like you said, its amazing! My mom is going to be home in a hour or 2 so i hope to have homemade jam by the time she comes back! I used 1 tablespoon of lemon juice and a little more than quarter cup of sugar, hope this works jack!

@blaarrosir It's his show, he can do what he wants. You don't like it, don't watch it. You create your own cooking show using your own money and see how far that gets you.
Keep up the good work, Jack. Your TRUE fans appreciate everything you do AND love your sauces!

@romankok once the jam cooled it thickened up nicely. I probably will cook it down about 2 minutes more next time to see what happens. it was a very lazy version but came out great.

    Hi,
i'm not that familiar with making jam myself but i know for regular jam you need a ratio of 50/50 Fruit and sugar to preserve it for a very long time...
Jack's Jam is so tasty that you don't have to worry about preservation... it will be far gone before it's questionable.... ;-)
My former Girlfriend used to "cook down" the strawberries in the microwave... that worked pretty fine and was convinient....

an easy way to fix jam is instead of using a gelatin such as knox gelatin try using strawberry jello it sets up nicely for freezer jam or jam that you can put in your refrigerator

Awesome Jack! I've been using a similar recipe for years. To make it a little smoother (if that's your bag!) you can stick blender it in the pot or throw it in your regular blender to get some of the chunks out. (my kids prefer it like that, but I like it more "adult" with the pieces of fruit)

If you make multiple jars at once:
But the jam in the jar and seal the jar as tight as possible and boil the jar until you hear a "POP" this will make the jars air tight and will last much longer (I also do this to homemade pasta sauce and homemade salsa!)

I've never heard of putting lemon juice in jam. I guess it only makes sense for the use of acid. My mom makes a strawberry and rhubarb jam once a year, and it's awesome on english muffins. I think I'll have to try out this recipe but instead of just one fruit I might go with a few different berries.

  • @shineegirl8
    @shineegirl8 12 років тому

A few months ago, I went to this course on jam making. This might be a tip but before you cook, you put the strawberry inside a ziplock bag and mash it up thoroughly before putting it inside the pan with all the lemon juice so that it would be easier to cook. If I am not wrong, you can only keep this for lesser than one month. Usually it lasts for 1-3 months. Actually , that is the way store bought jam is made. :DD

Jack, no need to defrost frozen berries. Just chuck 'em right on in there (as you'd say!). It takes a little longer, obviously, but works just as well. The water created from the defrosting will evaporate, and you're basically cooking it until it disintegrates anyway so there's no need to worry about it still being frozen inside. ;)

I'm almost out of the Teriyaki Sauce, and after seeing this Vid, I wanna head down there and grab some fruit too. Don't wanna drive 25 miles unless you're there though. Keep the vids coming. I'm making homemade strawberry jam as christmas gifts for my neighbors this year. It's my first time, so I've been doing a lot of research on it. I'm a little confused. All the other videos I've watched and recipes I've googled, would have me add Pectin, which is what thickens it to jam form. Did yours harden into jam or did it stay as liquidy (sp?) as it looked when it was still warm? Thanks Jack :)
