Hi from England, my dad was a chef, he died when I was19 in 1995 and you remind me so much of him from when I portered in his kitchens in London restaurants. Your natural affinity and vast knowledge of good, tasty food combined with your great rapport bring me many fond memories and often a tear to my eye. God bless you!
A man after my own heart. Makes gravy by the quart. I really enjoyed the meal and conversation at the table. This is Americana at its finest. Good food, good friends sharing a meal and a story, it doesn't get any better than this. Good bless, sir. Keep it up.
I wish i found your sooner, i keep watching your videos and it reminds me so much of my Dads side if the family.. one school Sicilian family that just live to cook. Thank you Jack it was a blessing to find you
11:27 - This is the magic moment when every drop of those incredible accumulated porchetta juices go right into enriching the gravy with all that amazing flavor. That's how it's DONE. Perfect!
YUM thanks Jack for making this!! We love our Porketta here in northern MN. We slow cook it, shred it, and and eat it on hard rolls with yellow mustard!
I love this channel. So real, delish food, and Jack's a fantastic Chef and personality. I've learned a ton watching this channel. My girlfriend friggin' loves me for making her all these dishes. Keep it going Jack.

O,my! Now, I'm hungry. Thanks for all your time and efforts . Love watching, wish I was there with you. Especially tasting that beautiful piece of meat. Well, done!
Beautiful!! Porccetta I made this last Christmas. It turned out beautifully. You didn't show opening the meat and adding the internal ingredients. Either way it's very very good. Your guest will not forget it.
i come to your Chanel when i've heard enough of politics and virus outbreaks on you tube, just to relax and hopefully pick up a few new tricks. love your laid back style. :-)

Been watching you about 3 months very enjoyable I like the way you cook haven't tasted your food brother but can tell you are a very good cook thank you for the videos sir
Great table conversation about the good old days in Italian neighbourhood complete with grocery stores, bakeries, and butcher shops. Sounds like any Little Italy in North America.
What an honor it would be to have Daddy Jack cook you a meal and sit down and have nice conversation. Chef best video to date. That gravy was on point. Amazing and consistent recipes. Can't understand why you don't have a tv show.
great job chef, killer vibe going on in your videos with a downhome feel, kinda reminds people of being in the kitchen as a young person watching the elders getting the supper ready and the anticipation of the meals. Best CHANNEL AROUND . BY FAR. Semper Fi
Just wonderful as always! Bless all of you; Rachel, Lucy, Lakiesha,.Corey, Bea(my favorite), Josh, Steve, Harvey, Bob Jacko, Paula,Tom, etc.,etc,(So sorry I'm unable to recall everyone's names!) But I for sure enjoyed you ALL and.fell.in ❤️ love with you all for sure ❤️! Thank you again so very much! (I hope you all have an idea of how many folks 💕 hearts you touched)!!!
Just wanted to say mr Chaplin that I love your vids ..my dad died 6 years ago..and you look just like him.....twin when I watch you it's like watching him cook all over again. Thank you sir
8:53 Doing that gravy the proper way. "Equal parts flour to fat". Thanks for the tip. I tended to a slightly greasy gravy sometimes so will give this a try.
I can only imagine how damn good that roast pork is Jack!!! Wow does it taste. Graaaavy, one of Jacks favorite skills making such amazing gravy to go with it. Was a little worried that too much flour was used, will loose the pork flavor esp since there wasn’t too much drippings to work with but guessing that isn’t the case. Great meal I bet. (All you at home chefs, we love to do the classic roast beef but run into the same problem- small quantity of drippings, usually just the bits baked into the pan bottom. Nothing beats real roast beef gravy, I too add the flour and scrape all the bits even add juice to it once we carve up the meat which isn’t much since we allow the meat to sit to redistribute. Any secrets to getting more gravy? Least for enough gravy for one serving per person.)
Daddy Jack's had posted on Facebook in late April asking for prayers, saying that Jack had a triple bypass heart surgery in September and started having complications. One of his daughters wrote Tuesday, "It is with deep and profound sadness that we share that after a courageous battle, our dad passed away today."
Nice video. I love that type of roast with those veggies. Nice recipe and great history lesson for the lovely lady. Only problem is due to the strict import laws here in Australia, I can not get her to ship me one of those Porkettas that she walk talking about.
What temperature are all those ovens at? Are they all different for different purposes? Love the vids, gonna come from Canada when this covid is all over.
wow thats a good looking👀 roast, I bet you had to get the big wallet out for that one! Wish I could give it a try, keep up the good work, thanks for posting. 👍
I wonder if he uses the same side towel that he cut the roast with and than uses to wipe his nose and forehead with...what do you think before? After? Or in combination with? Geeeezus!
Possibly the best video yet. Real people ! Jack is a true American Hero.

Use a good beef stock to boost the flavor instead of water. Really adds to the end volume you get.
