    This guys is awesome! I’m going through a divorce and when I feel down I watch him cook and I instantly feel better! Ive learned a ton and love his style of cooking. Cook to taste! Need more good dudes like this in the world!

    I use Ciabatta bread soaked in beef broth. No milk or water. Never miss an opportunity to add flavor.

    everything you did from baking off instead of frying, the dry bread with milk and water, frying one off to taste first before cooking off the whole batch..... is how I was taught.
    I was thinking something would be off....but heck know. This man knows his stuff! pleasure watching

    The onions, tarragon, cream, and vinegar are unfamiliar to me but I'm sure they are awesome! I like the idea of wetting the bread.

    Ok.. I happened to be making a big ol' pot of sauce and by chance ran into this recipe. My meatballs have always been sub par as far as I am concerned, so I thought I'd give yours a try. What I was most interested in was the bread/water/milk instead of the bread crumbs I always use. I also eliminated the garlic powder and peppers and had 3 lbs of meat (1 lb ground
    beef, 2 lbs pork sausage). Here's the verdict.. One word.. Awesome! Extremely moist and delicious. My new recipe for meatballs has been found. I think I'll try the peppers next time, I just didnt have them on hand.
    Btw.. I absoluty love the way you cook. Easy dishes, gourmet quality.
