Jack was a great chef and I have learned a ton from watching him cook. I love how he shoots from the hip sometimes. It leaves room for home cooks to imagine what they would do differently. That said, most of the time, I wouldn't change a thing! Other than the flame-thrower heat, simply because I can't think and cook that fast.

I could be wrong but apparently to keep Meats juicy enough you want to sear it let it rest and then sear it again because just by cooking Meats extracts out the juices letting it rest in between causes the juices to go back in the meat
