@@sueo.3292 I haven't tried, but I don't see why not. The cheese should help it freeze really well. I'm going to freeze dry some of it this week, if it can freeze dry then it can be frozen so I'll let you know how it turns out 😊
@@dawnrolle8374 yes! We froze 2 small containers just to try it and thawed it out 3 weeks later. It worked beautifully. One of them I put in my lunch bag in the morning as I was walking out to work and it was mostly thawed out by lunch so it didn't take long to heat through in the microwave 💖

I know some people will think this is sacrilege, but I use canned evaporated milk instead of half & half. I like it because, being evaporated, it is thicker and creamier than regular milk, without as many calories as half&half, and secondly, it is already cooked, being canned, so there is no chance of it curdling in the soup. I use it in all my creamy soups, macaroni & cheese, and some gravies. I also like to add a pinch of grated nutmeg along with the flour - it just adds a little something that tastes so good without being overpowering. And I cook my broccoli in the microwave before adding it to the pot - it just cuts down on the cooking time. Thanks for the recipe! Yum!
So not sacrilege. I grew up with all kinds of Finnish cream meals. Evaporated milk was a staple for those living in rural areas when there was no fresh cream (dry cows) for the new potato soup or Lohikeitto (salmon soup) etc. And the grated nutmeg? Not Finn but oh so perfect addition 😉

@@yanetzypena3483 you don't need to. Mine was raw, the smaller you chop it the faster it cooks. Just make sure you fully cook the broccoli in the sauce before adding the dairy
From my family, "This is Absolutely DELICIOUS! " My wife couldn't stop Mmmmm the soup. Had it with ham sandwiches. For those people who said this was too expensive to make, well it's not! I doubled the batch and it only cost me $23.58 and it made 7.5 quarts or 30 cups. You would only get 3 bowls at Panera's for the same money I spent. This was sooo easy to make. Thank you for this recipe!!
I literally have most of the ingredients in my home daily. I make my own chicken broth, and the only thing I would have to buy is the half and half. I buy the shredded cheese in bulk. So this would be cheap to make in my home.
Went to Panera today and ordered one bowl of soup and half of a sandwich and it came out to 16 and some change !!! Not to mention they cut half the menu of sandwiches! Their “ bowl” which costs 6.76 is more like a coffee cup ! Thank you for this ! You are going to save ppl lots of money ! 💜

I've never been to Panera's, but have tried this soup several other places. This one beats all of them (together). It was delicious. I'm 72 years old and disabled, so don't get out much. I stored the remainder in individual freezer bowls, so I'm fixed up for awhile. I look forward to having this when I can't figure out what to fix for one. It's right here in my frig!! So, since you're 72, be careful and mask up. The new variant of Covid is very contagious. Anyway, glad to see someone else that stays home & cooks like we do.

But hey, you do you, isolation and fear is a CHOICE, not a necessity.
I made this soup already two months ago and it was soooooooo delicious. I just bought smoked Gouda cheese and I am going to try it with that. If you say it tastes good I can believe that because that smoked cheese is so good. Have a good day. Be safe🕊️
I love working for Panera because our food is delicious! But god our prices are just out of pocket. I'm glad people are making their own recipes to "copycat" our soups!! So much healthier and cheaper. :)
@@Lady-Carmakazi I don't know what could be causing that. I've never had that issue arise at the cafe I work at. But we do keep our plastic utensils suspended in the air wit our soups in a thermalizer right below them. They might be accidentally knocking stuff over causing plastic to end up in your soup. I'm sorry that has happened to you FOUR times now! I would contact the store manager of that location and see what really is happening!
@@annie9828 hello, the odd thing is it's happened in Shoreline & Everett Washington and then I seen my son in law pull plastic out of his soup in Wichita Ks . It always looks like corners off of maybe cheese or meat packaging . Look to be torn off the corners but ruins your appetite not to mention what it could be doing to your digestive system when you actually don't see it and accidentally eat it. I've taken them to the managers and they just give us new soup. I think they know what they're off of but they never say. Wondering if the employees wear gloves and maybe the plastic sticks to their gloves when opening packaging then it somehow makes it's way into the soup . Idk really odd. We get take out from there a lot will save the next one we see or take pics maybe see if someone can figure it out. Just feels gross when chewing it too, I guess better a wrapper than something unidentifiable lol
carmakazi84 soup is reheated in a thermalizer while in a plastic bag then cut open and poured into a serving pan. These stores may have associates cutting open soup bags right over the serving pans and not paying attention to where the corners end up falling

Oh my GOD. This, is hands down thee best broccoli cheddar soup I've ever had. I use Caldo de Pollo to make the chicken stock. Unreal. Although, if you want tender broccoli and carrot, it will need to simmer in the stock for about 30 minutes. Thank you so much for this recipe💞

Made this soup and it was delicious. I did make some changes. I didn't have carrots so I subbed Ore Ida's cubed hashbrowns and added a package of chopped, cooked bacon. My husband and I ate it three days in a row. Can't wait to make it again.

Made half a recipe tonight! Absolutely outstanding! I had a piece of ham left over that I diced up and threw in with it and it was crazy good! FYI…Half a recipe will feed about three hungry people if you include some bread or rolls. This is one I will definitely be doing again!
I made this soup and I put almost all of it in freezer bowls for meals later. I thought it was delicious and it tasted BETTER than Panerra's brocoli and cheddar soup. My soup was bursting with flavor, I truly loved it. I will definately make more of this in the future !!

I make this soup every month now! I adore it. Thank you! Once in awhile, I simmer the veggies in the broth and add diced small potatoes. It’s such a wonderful soup. I’m a vegetarian so I use veggie stack but it’s just as good!!

@@caraxkins I can't remember exactly how long I kept it for...at least 3-4 days and nothing wilted or separated. Warmed it back up in the microwave and it tasted as good as the first time.
I just watched a video made months after this with the exact same ingredients except they used paprika instead of cayenne pepper. I prefer this one as it is more detailed in directions, has more cheese, and is thicker. I will be making this when it starts to get cold. Thanks!💕
This looks awesome! I used bone broth in mine because it was already opened and exactly two cups worth. I also used whole milk instead of half n half cuz I like mine more soupy… And since I’m going to freeze most of mine… I will put the cheese in one bowl at a time. It tastes good even with the bone broth. I could have cooked my broccoli a bit longer…. But since I’m freezing individual containers and reheating them… I think it will be ok. Thanks for the recipe!

Yea I dont know if any of you guys know but Panera dosnt make there soups I just quit working there there in bags frozen in the back we put them in a thermalizer and after they where thawed and warmed we thre them In a soup well
I didnt know whether to thumbs up or down. Lol I guess it is hard to make in store, besides not all employees follow the rules they want a consistent product. A lot of things are premade and partial cooked or fully cooked for fast food. 👍

The Michellin restaurants claim that they use the best ingredients but an ex Michellin chef said that they don't . They use cheap ingerdients .It's a business ! They are going to maxamise their profits . ( Hence the small 'fashionable' portions at expensive restaurants, all a con!) Some years ago Gordon Ramsay was caught using frozen fishcakes that cost £1.00 each and he claimed that they were fresh and sold them for£25.00 each in one of his restaurants . It was all in the UK papers . His PR have had this info removed from Google , along with his other cons , inc charity , and court cases against him.
Wow just made it. So easy to follow and delicious. I attempted broccoli chedddar before from a different recipe and lets just say.. I haven't made it since lol. I used to loveee getting the broccoli cheddar from panera until they told me it was made from chicken stock (im vegetarian) so I have been missing a good one since. Finally with this recipe I can use my vegetable broth and it tastes the same! Love it! Can't wait to freeze it and havee it to eat throughout the month for lunch at work.

I have made this recipe a lot, every time it's a crowd favorite and everyone compliments it as the best cheese soup they've ever had. I add diced asparagus in mine it's a great recipe that isn't overly complex.

It is exactly like Panera. I cooked my own chicken broth from chicken breast with a bay leaf and an allspice and shredded that chicken breast to the soup as well to enhance texture a bit. That was a heaven it my mouth! I used this time a mild cheddar and next time I will use a sharp cheddar for more flavor. Thank you for your recipe!

Pretty good recipe. I made it with non dairy half and half and added less than half butter. I added only two handful cheddar cheese and still turned out amazing. I made sure I boil the broccoli longer before I add flour after reading reviews. Thanks for sharing this.

I just made a single batch recipe. I have no idea what Panera has as a cheddar soup and never will. This is GOO-UD ! I made with mild cheddar after reading as the aging process goes on for sharp and extra sharp the melting quality may be affected. I don't know. I put a extra Cayenne in because I couldn't pick up on it when the soup was hot while being made. A dash will do and I like the throat feel of the cayenne. It's a cream base and has some inherent capsaicin antidote built in. @ Kristin mini slice of farm Would sharp cheddar work?

But we do keep our plastic utensils suspended in the air wit our soups in a thermalizer right below them. They might be accidentally knocking stuff over causing plastic to end up in your soup. I'm sorry that has happened to you FOUR times now! I would contact the store manager of that location and see what really is happening!
@@annie9828 hello, the odd thing is it's happened in Shoreline & Everett Washington and then I seen my son in law pull plastic out of his soup in Wichita Ks . It always looks like corners off of maybe cheese or meat packaging . Look to be torn off the corners but ruins your appetite not to mention what it could be doing to your digestive system when you actually don't see it and accidentally eat it.
I've taken them to the managers and they just give us new soup. I think they know what they're off of but they never say. Wondering if the employees wear gloves and maybe the plastic sticks to their gloves when opening packaging then it somehow makes it's way into the soup . Idk really odd. We get take out from there a lot will save the next one we see or take pics maybe see if someone can figure it out. Just feels gross when chewing it too, I guess better a wrapper than something unidentifiable lol
carmakazi84 soup is reheated in a thermalizer while in a plastic bag then cut open and poured into a serving pan. These stores may have associates cutting open soup bags right over the serving pans and not paying attention to where the corners end up falling

Oh my GOD. This, is hands down thee best broccoli cheddar soup I've ever had.
I use Caldo de Pollo to make the chicken stock. Unreal. Although, if you want tender broccoli and carrot, it will need to simmer in the stock for about 30 minutes.

Made this soup and it was delicious. I did make some changes. I didn't have carrots so I subbed Ore Ida's cubed hashbrowns and added a package of chopped, cooked bacon. My husband and I ate it three days in a row. Can't wait to make it again.

I thought it was delicious and it tasted BETTER than Panerra's brocoli and cheddar soup.

I make this soup every month now! I adore it. Thank you! Once in awhile, I simmer the veggies in the broth and add diced small potatoes. It’s such a wonderful soup. I’m a vegetarian so I use veggie stack but it’s just as good!!

@@caraxkins I can't remember exactly how long I kept it for...at least 3-4 days and nothing wilted or separated. Warmed it back up in the microwave and it tasted as good as the first time.

I just watched a video made months after this with the exact same ingredients except they used paprika instead of cayenne pepper. I prefer this one as it is more detailed in directions, has more cheese, and is thicker. I will be making this when it starts to get cold. Thanks!💕

This looks awesome! I used bone broth in mine because it was already opened and exactly two cups worth.
I also used whole milk instead of half n half cuz I like mine more soupy…
And since I’m going to freeze most of mine… I will put the cheese in one bowl at a time.
It tastes good even with the bone broth. I could have cooked my broccoli a bit longer…. But since I’m freezing individual containers and reheating them… I think it will be ok.

Yea I dont know if any of you guys know but Panera dosnt make there soups I just quit working there there in bags frozen in the back we put them in a thermalizer and after they where thawed and warmed we thre them In a soup well
I didnt know whether to thumbs up or down. Lol I guess it is hard to make in store, besides not all employees follow the rules they want a consistent product. A lot of things are premade and partial cooked or fully cooked for fast food. 👍

The Michellin restaurants claim that they use the best ingredients but an ex Michellin chef said that they don't . They use cheap ingerdients .It's a business ! They are going to maxamise their profits . ( Hence the small 'fashionable' portions at expensive restaurants, all a con!)
Some years ago Gordon Ramsay was caught using frozen fishcakes that cost £1.00 each and he claimed that they were fresh and sold them for£25.00 each in one of his restaurants . It was all in the UK papers . His PR have had this info removed from Google , along with his other cons , inc charity , and court cases against him.

Wow just made it. So easy to follow and delicious. I attempted broccoli chedddar before from a different recipe and lets just say.. I haven't made it since lol. I used to loveee getting the broccoli cheddar from panera until they told me it was made from chicken stock (im vegetarian) so I have been missing a good one since. Finally with this recipe I can use my vegetable broth and it tastes the same! Love it! Can't wait to freeze it and havee it to eat throughout the month for lunch at work.

I have made this recipe a lot, every time it's a crowd favorite and everyone compliments it as the best cheese soup they've ever had. I add diced asparagus in mine it's a great recipe that isn't overly complex.

It is exactly like Panera. I cooked my own chicken broth from chicken breast with a bay leaf and an allspice and shredded that chicken breast to the soup as well to enhance texture a bit. That was a heaven it my mouth! I used this time a mild cheddar and next time I will use a sharp cheddar for more flavor. Thank you for your recipe!

Pretty good recipe. I made it with non dairy half and half and added less than half butter. I added only two handful cheddar cheese and still turned out amazing. I made sure I boil the broccoli longer before I add flour after reading reviews. Thanks for sharing this.

I made with mild cheddar after reading as the aging process goes on for sharp and extra sharp the melting quality may be affected.

I put a extra Cayenne in because I couldn't pick up on it when the soup was hot while being made. A dash will do and I like the throat feel of the cayenne.
It's a cream base and has some inherent capsaicin antidote built in.
