- This recipe for Mapo Eggplant is suitable for those who do not like spicy food and even for children.
If you want spicier taste, you can add soy bean sauce!
■Ingredients (2 to 3 servings)
3 long eggplants (5-6 regular size)
250g beef
1/2 leek
1-2 teaspoons garlic
1-2 teaspoons ginger
1 tablespoon miso
◎Seasoning
1 teaspoon soy sauce
1 teaspoon vinegar
2 tablespoons sake
2 tablespoons oyster sauce
1 tbsp sugar
1 teaspoon chicken stock
100ml hot water
1 teaspoon potato starch & water
1 teaspoon sesame oil
■Directions
1. Heat oil in a frying pan, fry the cut eggplants to coat them with oil, cover with a lid and steam until cooked through.
2. Mix seasonings, shred green onion and cut meat.
3. Add garlic and beef to the pan, stir-fry, then add green onion, ginger and miso and stir-fry thoroughly (add soybean paste for spiciness).
4. Add seasonings and bring to a boil, then add eggplant and simmer for 3 to 4 minutes until blended.
5. Add potato starch to thicken the sauce.
6. Add sesame oil to finish.
