When I visited Alfredo alla Scrofa in Rome, I begged the waiter for the OG recipe and 50gms butter is too much according to him per person. It's ~20 and lot more Parmigiano. I like the idea of adding mushrooms though, will try !
So my daughter and I looked in the fridge - and we had some fresh fettuccini, some unsalted butter, and plenty of decent parmigiana etc etc - its protected in UK after all, even after brexit. We also had some frozen peas, some mushrooms, some fresh basil, and some garlic, and some chili flakes. Not how you did it, but this is lovely. You can't have too much butter and cheese. Well, unless your doctor is, well, get a different one. Something like that.
I love this guy, he’s the real deal. His character reminds me of a great guy that was a trattoria restauranteur in Adelaide. I make mine almost the same, but when I don’t have truffle I do add a dash of white wine. Don’t underrate this guy and make sure you definitely don’t substitute the Reggiano Parmigiano - it’s the ONLY cheese for this dish. Vincenzo, bravo once again
Nice idea! For me a rule of aglio e olio with mushrooms a little butter and garlic, a bit of parsley and if you’re feeling really crazy some zest, a little red chilli too! Normal rules apply for the order! (An Englishman with a Nonna from the south!)

Vincenzo, when I turn off the heat to add pasta and cheese to the pan, specifically in this recipe (Parmesan) and your cacio e Pepe (pecorino) recipe, the cheese gets stringy, I am using very thick bottomed all clad stainless pots, should I turn the heat off sooner?

Truffle may be quite expensive, or simply unavailable, so i'll probably do without, i have Porcini shrooms as there's a lot in my region (Basque Country) i'll just add some pepper at the end and i'm sure it's still be great.
I have the opposite problem. I have no problem getting fresh truffles, but getting the fresh porcini is like getting an X-Box on Black Friday, lol. I swear, they stock the shelves in the morning and they're gone in an hour. One of these days I'm going to show up at the store at 7AM and just WAIT. I'm tired of playing roulette with my dinner plans!

I was going to do this recipe...but the scallops were fantastic, so I ended up making a seafood risotto. Oh well! Maybe next week, lol. I just have to show up early at the market. But porcini season is ending...

To improve this recipe used dried porcinis … rehydrate in a bowl of water. Use that mushroom water to boil pasta

@@vincenzosplate As USUAL, lol, my market was out of porcini by 9AM. I think it's restaurant buyers that show up early, and buy them all. But I got some chanterelles. I was going to do this recipe...but the scallops were fantastic, so I ended up making a seafood risotto. Oh well! Maybe next week, lol. I just have to show up early at the market. But porcini season is ending...
