    Alfredo Pasta is not known in Italy because it's simply called Pasta al Burro. Today I share a pasta al burro recipe with extra mushroom and porcini. I called it alfredo because it is how it's known worldwide and I hope this will change the way you eat Alfredo. Feel free to leave a comment if you liked this recipe.

      @@maciej-36 yes I saw that too. He like to add one clove of Garlic only. Because he believes that essence of garlic is enough, however he never said that viewers shouldn't add more for their liking...they can

    I only found you when watching your review of different chefs doing carbonara. However since then I’ve made your carbonara recipe and now I’m definitely making this it’s looks brilliant. Underrated chef 🙌🏻

      I live alone and I do not usually eat a lot of carbs. But once I found his recipe on how to make one portion at a time, I treated myself to it at Christmas time! I had never tried it until I went to Perú a few years back and loved it, but could not find a good one here locally, in spite of all of the Italian restaurants.

    To improve this recipe used dried porcinis … rehydrate in a bowl of water. Use that mushroom water to boil pasta

    Cooked this recipe for my significant other who is not a fan if pasta. She loved it so much that she ragards its as one of her favourite dishes...She asks me to cook it for hel all the time... Needless to say that i also love it, despite having doubts about not using cream.I was wrong. Thank you Vincenzo!
    P.s. I used truffle oil, much less expensive, yet delivers the essence of truffle to a great extent,

    When I visited Alfredo alla Scrofa in Rome, I begged the waiter for the OG recipe and 50gms butter is too much according to him per person. It's ~20 and lot more Parmigiano. I like the idea of adding mushrooms though, will try !

    So my daughter and I looked in the fridge - and we had some fresh fettuccini, some unsalted butter, and plenty of decent parmigiana etc etc - its protected in UK after all, even after brexit. We also had some frozen peas, some mushrooms, some fresh basil, and some garlic, and some chili flakes. Not how you did it, but this is lovely. You can't have too much butter and cheese. Well, unless your doctor is, well, get a different one. Something like that.

    I love this guy, he’s the real deal. His character reminds me of a great guy that was a trattoria restauranteur in Adelaide. I make mine almost the same, but when I don’t have truffle I do add a dash of white wine. Don’t underrate this guy and make sure you definitely don’t substitute the Reggiano Parmigiano - it’s the ONLY cheese for this dish.

    Nice idea! For me a rule of aglio e olio with mushrooms a little butter and garlic, a bit of parsley and if you’re feeling really crazy some zest, a little red chilli too! Normal rules apply for the order! (An Englishman with a Nonna from the south!)

    Oh god, I want to try this Alfredo recipe that brings new flavors gently 😍. Since I rarely have truffles I guess i'll use porcini and a light touch of crushed black pepper.

    Parmigiano-Reggiano is one of the BEST cheeses I’ve ever tasted! Salty, very faintly sweet and FULL of flavor! I’ll never go back to Parmesan. 🥰

      @@vincenzosplate Yes but scialatielli can be hard to find and costs like 7 times the price of other pasta. And buying whole truffles for one person nah :P But i will make the base with porcini, looks great

With shiitake mushrooms for my wife and I, grilled, shredded chicken breast for my daughters and their friends. They loved it, your recipe was a great success.       @@vincenzosplate I have made it and it was good, definitely more healthier version of Alfredo pasta with mushrooms. Filling and not at all heavy. Next time I will find truffles to use,.didn't have them this time.

    Vincenzo, when I turn off the heat to add pasta and cheese to the pan, specifically in this recipe (Parmesan) and your cacio e Pepe (pecorino) recipe, the cheese gets stringy, I am using very thick bottomed all clad stainless pots, should I turn the heat off sooner?

    Truffle may be quite expensive, or simply unavailable, so i'll probably do without, i have Porcini shrooms as there's a lot in my region (Basque Country) i'll just add some pepper at the end and i'm sure it's still be great.

      I have the opposite problem. I have no problem getting fresh truffles, but getting the fresh porcini is like getting an X-Box on Black Friday, lol. I swear, they stock the shelves in the morning and they're gone in an hour. One of these days I'm going to show up at the store at 7AM and just WAIT. I'm tired of playing roulette with my dinner plans!

      @@vincenzosplate Will do next weekend. I don't have truffles so I just ordered Dusting Truffle which I think is the cheapest. Man those are expensive! But thank you for the recipe. Will try with Shiitake as those are my favourite mushrooms on any dish.

      @@vincenzosplate As USUAL, lol, my market was out of porcini by 9AM. I think it's restaurant buyers that show up early, and buy them all. But I got some chanterelles. I was going to do this recipe...but the scallops were fantastic, so I ended up making a seafood risotto. Oh well! Maybe next week, lol. I just have to show up early at the market. But porcini season is ending...
