Alfredo Pasta is not known in Italy because it's simply called Pasta al Burro. Today I share a pasta al burro recipe with extra mushroom and porcini. I called it alfredo because it is how it's known worldwide and I hope this will change the way you eat Alfredo. Feel free to leave a comment if you liked this recipe.
Garlic with mushrooms is a must, Vincenzo just doesn't like garlic... :(

I live alone and I do not usually eat a lot of carbs. But once I found his recipe on how to make one portion at a time, I treated myself to it at Christmas time! I had never tried it until I went to Perú a few years back and loved it, but could not find a good one here locally, in spite of all of the Italian restaurants.

I love this guy, he’s the real deal. His character reminds me of a great guy that was a trattoria restauranteur in Adelaide. I make mine almost the same, but when I don’t have truffle I do add a dash of white wine. Don’t underrate this guy and make sure you definitely don’t substitute the Reggiano Parmigiano - it’s the ONLY cheese for this dish.

@@vincenzosplate I have made it and it was good, definitely more healthier version of Alfredo pasta with mushrooms. Filling and not at all heavy. Next time I will find truffles to use,.didn't have them this time.

So my daughter and I looked in the fridge - and we had some fresh fettuccini, some unsalted butter, and plenty of decent parmigiana etc etc - its protected in UK after all, even after brexit. We also had some frozen peas, some mushrooms, some fresh basil, and some garlic, and some chili flakes. Not how you did it, but this is lovely. You can't have too much butter and cheese. Well, unless your doctor is, well, get a different one. Something like that.

With shiitake mushrooms for my wife and I, grilled, shredded chicken breast for my daughters and their friends. They loved it, your recipe was a great success. Thank you so much for sharing it. 🥰🙏🙏🙏🙏

Cooked this recipe for my significant other who is not a fan if pasta. She loved it so much that she ragards its as one of her favourite dishes...She asks me to cook it for hel all the time... Oh god, I want to try this Alfredo recipe that brings new flavors gently 😍. Since I rarely have truffles I guess i'll use porcini and a light touch of crushed black pepper.

@@vincenzosplate As USUAL, lol, my market was out of porcini by 9AM. I think it's restaurant buyers that show up early, and buy them all. But I got some chanterelles. I was going to do this recipe...but the scallops were fantastic, so I ended up making a seafood risotto. Oh well! Maybe next week, lol. I just have to show up early at the market. But porcini season is ending...
