    Vincenzo, my recommendation for always keeping your guanciale crispy is to cook it FIRST. After the meat is cooked and the fat is opaque, you can remove it from the pan and reserve it in a bowl till the end. All the fat that rendered into the pan can now be used to sauté the onions. You can add the guanciale back in at the very end when you are tossing everything. In this way, the guanciale stays super crispy, but the flavors are still married into the sauce.

      This was also my first instinct when I saw you throw the guanciale in with the onions, Vincenzo. The guanciale cannot crisp up because there is too much moisture from the onions. I just discovered your channel, and you inspired me to make all the traditional Italian pasta dishes!

      Yup. The water in the onions will keep the guanciale from getting crispy. I know it's not authentic, but I really like the smoky flavor from the bacon :)

      The Way we do In our restaurant is first we crisp up the guanciale and keep aside and make a pork fat and and mix in the fat from guanciale. For quick service.

    I was raised in an Italian home but I never saw my parents use the eggs and even the black pepper and cheese the way you do. You've given me a whole new approach to cooking pasta. Out of this world looks and flavor.

      I too was raised Italian. Both parents from Campania region. The food was simple but absolutely delicious and I cook the same way. On occasion I will cook " a la americanada ". My parents, God Bless them, that they are not here to see that!😂

    Very similar to one of the first meals i helped make. My grandmothers neighbor noticed i was interested in cooking, she was a recent immigrant from Sicily to the seattle area. Great memories learning to cook with her, including her always having 2 wooden spoons in her apron. One for the sauce pots, and one to smack me when i did something wrong. Bridgetta was amazing. She taught me how to improvise with food, and started a lifelong love of using wooden spoons instead of metal. Side note, in your gorgeous mushroom risotto video, it should be mentioned that you should never use a metal utensil to stir the risotto, always wood, otherwise you will break and cut the rice grains. You want to massage the starches out gently to build that creaminess. Again, i love your videos.

    Amazing Vincenzo. I haven't heard of it and I can't wait to try it!
    Regarding your guanciale, it probably didn't crisp like in a carbonara because you sauteed the onions first which release a lot of water and juices which can affect the protein from becoming crispy. I'd fry up the guanciale first then add the onions and sausage second.
    Keep it up mate, you're my favourite Italian cooking channel and a source of great inspiration, passion and culture! 🤌🤌🇮🇹🇮🇹

    I made this yesterday, and came out great. I changed one item however. I have found it is difficult general to crisp up the Guancale (or pancetta, etc, depending on dish) after the onions are in. I did the Guancale first, removed from the pan, then did the onions. When time to add the tomatoes to mix, I added 2/3 of the crispy guancale, and reserved the rest to add th the tops of the plates.

    Hi Vincenzo! I just made this gorgeous pasta sauce. One of our new loves! On the video, you said to simmer the tomatoes for 30 minutes, but in the recipe you wrote 15 minutes.     Zozzona is so underrated imo but it's really lovely. What I do sometimes is exchanging the Salsicchia with spicy Chorizo. Of course it's not original and no longer Zozzona but it gives the dish a gentle heat kick 😋

    Hey Vincenzo, about the guanciale, to make it crispy like in Rome, as you said, I like to render it first, get it to release all the fat and become crispy and take it out of the pan. The fat from it stays in the pan and gives to flavour to everything, and I add the guanciale right at the end, with the pasta basically. That way it stays very crispy. If you cook it with the onion and tomato for me it softens up too much. Its personal preference but I wanted to chime in since you mentioned it in the video, love your stuff, cheers ^_^

    I never knew about this dish. But I do now!! Gonna make it as soon as I can get some guanciale which is hard to come by in the American MidSouth.

    I'd love to see a Vincenzo's plate butcher's edition. Guanciale, pancetta but mainly Italian sausage. What makes them special etc. I can't find Italian sausages anywhere here (we have raw unsmoked ones but they're completely different) and I'd be interested on how to substitute (mince plus whats...)

      Italian sausage can change a lot depending on which region you go to in Italy. to me the best is in Marche in the Ascoli Piceno area, it is minced so thinly that you can eat it raw spread on bread, and it's just amazing. But in general, is pork minced quite finely, without any flour or other weird stuff that is added in other places (for instance in the UK), the only thing that is added is usually pepper and a few other things to give it some more flavour.

      where do you live ? i think this chef has access to sources of farms which public does not. In most good food cities in US the chef owners also have operations where they raise livestock and fruits and vegs. One used to be able to get fantastic product from local farmers seasonally. I can recall when this all disappeared. the speciality items in meats and cheeses from various euro countries could only be bought in places like arthur avenue in bronx and astoria queens for greeks.

    I've never heard of it (but the same was true of the Spaghetti all'Assassina). I have three teenage boys that it usually takes me half a pig to feed. I think I'll give this quite nutritious recipe a try!

Your onions were perfect, my stove is different. I'm not giving up I love all of your recipes I have made a lot. My next one us your Nonna's lasagna made with crepes. looks so delicious

    Made this dish tonight as I have never heard of it. I only had thick cut pancetta available. This dish was a fabulous, rich decadent romance of flavors.. my new favorite. I will find some Guanciale and make again. Thank you for the passion you bring to every recipe you share with us.

    This recipe was absolutely fantastic. I followed it newrly to a "T," with the exception of adding a generous pinch of crushed red pepper after the onions started to turn golden and translucent as a nod to the Amatriciana, to give that subtle heat from the back.of your throat but not kicking you in the teeth.

    Vincenzo is the best. His recipes cannot be improved, however IOnoticed his Guanciale was at room temperature when he was trying to slice it. If it were still cold it would slice easier.
