  • Pellet Smoked Burgers in the Pit Boss KC Combo
    For this Texas Smokehouse Burger recipe I’m starting with 3.5 pounds of 80/20 burger meat and splitting it into 4 Texas Sized burger Patties.
    These are huge burgers, and they need to be in order to absorb enough smoke.
    These are "Smokehouse Burgers" so we're not grilling these burgers, we're cooking them indirect and letting them sit in the smoke for about an hour and a half. The Smoker was set to 250 degrees Fahrenheit.
    The seasoning I used is Kosmos Q Texas Beef Rub.

    Your snow is gone. Pit Boss finally quit discriminating against us in flyover country. On of our Walmart’s finally got the KC Combo and the Lockhart in. They are nice for sure. Too big for my space. I think I’m going with the series 3 vertical and the Classic for my complete smoking needs. 🍔 looked really good. Nothing like a toasted buttered bun. Sold show Buckeye.

    Something I have started doing with my burgers. I like to mix ground pork into my burger. Usually I do 4 pounds to 1 pound of pork. Might try it. It adds alot of juice and doesn't really take away from the flavor of a burger. I also use shredded cheese as a binder instead of bread crumbs due to gluten

    nothing like a dual cooker to do the smoke and sear!!! You should hit them burgers on that hot side about 1 minute a side to make them perfect.

    So I used to smoke burgers like this indirect with charcoal. I moved to an apartment and couldn't grill a couple years. Now I'm back in a house and using a pellet grill. My burgers keep coming out rubbery and that never happened before. I don't get it; same thing with chicken skins. I used to have the best burgers and crunchiest chicken skin. Any tips? The grill is doing great with Briskets, Pork butt, ribs, etc

    Love these recipes Mike !! Was thinking about getting this kc combo but was wondering if anyone else has one and likes it , I have the austin xl pellet grill and love it I have used the hell out of it for going on 4 years and it has never let me down, thanks.

      Thanks, Kevin. I gave my KC Combo away to a subscriber and they like it. I used it a couple times and became disappointed with the smoke flavor it creates compared to my vertical. I would only recommend this model to someone just starting out who needs both a gas grill and a smoker.

      Looking at your list, my advice is to not buy the KC Combo. You have some better options to choose from :)

    Dang nice video and cook Mike. I'm like Russ them some BIG Burgers but they looked great...I would have to leave off the cow patty growth as I am allergic to shrooms. But love to hunt them Morrells because they sell for $20 a pound in S.W. KY.

      Yes you can! You’ll notice that I did not sear the burgers at all... you don’t need to. Just set the vertical to 250 F and flip them at about 135 F. Take them up to your desired temp from there and put your cheese on. I think the perfect smoked burger temp is around 155 but it’s up to you on how you like them cooked.

    After watching your videos I bought the KC Combo. How long did it take you to get the griddle to 420 degrees? I am having issues with it getting hot and I have it over the flame no grates or covers.

      Hi, Michael. It’s been a while but I think it was up to temp after about 20 minutes with the lid closed. I had someone else reach out with the same issue and the regulator on the hose was bad.... the flames were not at full blast

    Mike you outdid yourself on that smokehouse burger cook. From the low and slow to the mayo to the BBQ sauce and how about that smoke cheddar. I bet those things tasted as good as they looked. real nice job buddy.

    Is the KC combo worth purchasing? Would you replace the vertical smoker or the Austin XL?

      Edgar Benavides great question Edgar. In my opinion, the KC is only worth purchasing if you need a smoker and propane grill & griddle. I would not replace my vertical with it.

    Pit lettuce on the bottom to help keep the bun together. Once you get to 140, hit the burgers with a sear on both sides, give it some crust on the outside

    Just a quick question if i may , why did you chose to put the seasoning on the outside and not mix it in to the burger meat before forming them into the burger patties. Just interested to know the thought process behind your method

      You can mix it in if you like. My reasoning is the seasoning on the outside will help form a crust.

      Hi, Bobby. The smoker side did not meet my expectations. I'm not saying this a bad product by any means... it is a great grill and an average smoker. I ended up getting rid of it a few months ago to make room for another toy :)

    Great vid! One question respectfully asked: Why the gloves when you touch the meat then spices, etc.? I don't care, but then I don't wear gloves, either. :)

      Thanks, Carl! I wear the gloves mainly because I have multiple cameras and microphones that I need to move around and being outside I don’t have a sink to rinse my hands.

    I have the KC combo it’s a great grill but lousy smoker. My XL 1000 you could adjust the smoke level. This one you can not. In all the reviews I have watched on this grill no one mentions that. Or the fact that the pellets in the hopper do not always feed into the augger. When it’s half full the pellets stop dropping. How about the fact that the grill is WiFi but you can not set any alarms. Or the fact that you have to turn smoker on to use the light in the grill. Makes me question reviews

      Hi, Ryan. I agree with you on all of your points. I prefer my vertical smoker because it puts out a ton more smoke, I'm not impressed with the app (mine is only Bluetooth), and the thing with the light was a total design flaw. I am not in the product review business though and dont make that kind of content.
