In this video I attempt a slow smoked chuck roast. I used a water pan and set the smoker to 275 degrees Fahrenheit. Total cook time was about 6.5 hours with an additional rest time of 60 minutes. The smoked chuck roast became probe tender at about the 207 degrees.

@7:21...I worked at a specialty bbq place for 8 years. We never smoked chuck or briskets at that high of a temp. 265 max
At the 5:08 mark of the video you talk at the internal temp. The ambient temp is 275 and on the center it is 250. I don’t have a water pan on my yet when my grill hits 275 on the ambient thermometer the inside prods are reading 330 and 350.
Pro at making the shot. Gloved hand on the probe. Clean hand on the meat. Didn't block the view. Great work.
This video actually pissed me off... because when you were done slicing I was getting ready to devour a piece... and then I remembered that I was only watching a video and my phone wouldn't taste the same as that amazing looking bark! Great job, brother!

Noticed on the in boxing/first cook, the side shelf had what appeared to be a wooden chop block. But in this video, it looks like just a metal shelf??

Anybody had any issues with grease leaking from the flange under the ash clean out tray?
We smoked on this yesterday for the first time. We did ribs smoked for 5 hours and they were half raw half jerky so disappointed. The chicken was the same.

Looks good - but do not put your corded probes on the hot surfaces of the grill... It can kill them or make them very inaccurate..

Thank you for the chuck roast idea. Have you guys tried Spade L Ranch beef marinade and seasoning from Kroger/Smith's? I just add coffee to it. It's delicious. It's with their crab boil products in my area. Edit: Actually using Spade and coffee on a tri-tip in my pellet smoker as I typed this.

Great video!! Thank you for sharing these smokes and tips. One thing i do with my pit boss pro series is if im not searing anything i wrap the heat shield with aluminum foil. You wont have to clean it as often and wont have that grease build up. Just food for though (no pun intended). Looking forward to more vids!

What is your overall feel for this smoker? Like it, don't like it?
I would only recommend it if you need both a smoker and a gas grill. It is a jack of all trades but master of none.

DLX Pro, I love it. Doesn’t have the smartphone app to remotely control it but it has the exterior probe and holds temp really well and it’s very sturdy. I got it from Amazon with a cover for $750

We finally got them here South Dakota last year. All out now probably till early spring. I sold mine. I'm not a fan of the sear plate and the mobile app was too sketchy for me. I have a Pit Boss Series 3 vertical. I love it. Only drawback is it's a bit small. I may consider going to their Series 5 or perhaps the Sportsman 5, assuming why someone can justify to me why the Sportsman 5 is worth $200 more than the Copperhead 5.

one comment on the grid. "There ain't no cure for stupidity." they put it there so people wouldn't stick their fingers in the auger. This way you take it out you do so at your own risk. It's called liability lawsuits from idiots wanting to get rich at the expense of others. My question to you is where did you find those neat magnets? Did they come with the hooks?

I have and very much love the Pit Boss KC Combo. I do recommend adding a smoke tube to it if your the type that wants a strong smoke flavor and exaggerated deep smoke ring.
The only real down side to the KC Combo is that you end up with a somewhat smaller smoker area and smaller griddle/ grill area compared to stand alone full sized units. But often times we are limited in space and this compromise is worth it.
Last weekend I smoked 15 lbs of pulled pork for the Sunday football game, and this weekend I'll be making around 14 lbs of Chuck Roast (pulled) for the game day. You can do decent sized cooks on this, but I've seen stand alone retail smokers that look like that have almost twice the area.
But the food I've done has all been amazing. I love my KC Combo!

I smoked a 14 lb turkey with no problem at all. I'm sure I could fit an 18 lb easily with the upper rack removed.

I will say that the split design having the griddle and smoker is awesome. But I can barely get 4 racks of ribs in it and it's really tight to work with like that. I may try to get a much larger, dedicated smoker this fall when clearances start.

What brand of pellets did you use for your cook? I like that smoke ring you have there. I also noticed and you had mentioned in the comments in another video the lack of smoke produced by this grill and you had to use a pellet tube. Was it your pellets or is it an issue with the grill burning too clean?
I think I used the competition blend pellets on this one. I always get a good smoke ring with this smoker but the smoke flavor isn’t very strong. In my opinion I think their PID controller burns the pellets too efficiently. Don’t get me wrong, it’s a good grill but I prefer the results I get from my vertical smoker over this one.

Does anyone ever notice a false temperature on the vertical smoker? With a really good cleaning should it fix it up?
Get a good degreaser and clean that probe back down to the metal. It makes a big difference

Smoker newbie. Why keep it on the smoker after wrapping?
You can finish cooking it in the oven if you like. It makes zero difference at that point.

@@SmokyRibsBBQ I did a practice run about a week ago with a slab of ribs and they were awesome. I like the control you have with the two air intakes and there was still a ton of charcoal left for a future cook. I love it.
That looks great will need i will try that on my Louisiana vertical smoker, I noticed the Pit Boss smoker in the background has nice roller wheels, what did you use for wheels , How difficult was it to make the change
How does this Pit Boss model do with maintaining temp while smoking? I had the large upright Pit Boss pellet smoker, and it would range from 195-300 degrees while I had the temp set at 225. It was horrible for smoking because it would go from an inferno, to barely heating. I really like this grill, but I don't want to get it if they haven't done any better with temperature control.
In the short time that I had this unit, I noticed that once the smoker preheated for about 30 minutes, the temps were within 10 degrees either way of what the dial was set to. The new PID controller really eliminated the temp swings but in my opinion, it burns too clean and there is very little smoke flavor compared to my vertical or other smokers.
@@WeekendWarriorBBQ Thank you. I think I'm going to go with the Camp Chef Woodwind SG. It not only has temp settings, but you can also set the amount of smoke from 1-10. It's expensive as heck, but I hope it's worth it!

How easy is it to change the pellets. Does it have a lever?
Hi, Chris. I haven’t emptied them yet but there is a small lever on the side that pulls out and then there is a little door on the back. Looks like I can just set a bucket under there and they will fall right in.
What's the difference with this kc combo and the platinum one?
Do you prefer the Pit Boss Vertical smoker or this one ? Does one give better smoke flavor etc
If I had to choose one over the other I think I would go with the vertical. It puts out better smoke flavor in my opinion. The KC is still a great smoker and I think a lot of people will get one because you can smoke and grill with one cooker.
Did it have smoke flavor?
I just bought one of the smaller pit boss units. It cooks great but no smoke flavor despite smoke billowing out. I called customer service and they said it was because I had it at 250. They told be to cook below 225 to get the smoke flavor.
I would try putting it on the smoke setting for the first hour or get one of those smoker tubes if you like a lot of smoke. Another thing I have noticed is that a water pan helps the smoke “stick” to the meat.

Looks good and I say I agree with Krista can’t wait to try this on my pitboss. Out of curiosity how do you like you kc combo? I’m looking into getting the Lockhart but have seen mixed reviews on it my buddy smokinjazz has one and says it’s amazing.
Hi Kurtis. The KC is an awesome grill but it’s not the best smoker. It puts out very little smoke so you’ll need a pellet smoke tube to help with smoke flavor.

Hey Mike just a couple questions, with the broiler plate closed it looks like there is hardly any smoke rising, is that the way to smoke or should it be open a touch. Second do you get more smoke if the chimney cap is open a lot or do you keep it somewhat closed. Hey, Rob! I feel like if I open the broiler plate even a crack it might get too hot. I have a ton of vertical smoker videos you can check out but for now, I am still learning how to use this one. My thought is that in the cold weather I’m keeping the cap closed more than usual to help retain heat.

@@WeekendWarriorBBQ I don't think it'd get to hot cause you have a temp controller but you'd get a slight sear on the meat. Once you wrapped it then no problem. If you need more smoke run it at a low temp say 180-200° for an hour or use a smoke tube. The pellet grills don't have the temp swings like the vertical smoker and the swings are what produces the smoke in the verticals. Just an fyi I have 2 green mountain pellet grills and their controllers hold temps with very slight fluctuations where my vertical swings 15-20° either way and the smoke flavor is more pronounced
@@sneakyblackdog I 2nd the smoke tube. I have the Cuisinart Woodcreek and Blackstone 36 griddle. But will be getting the Pitboss KC Platinum for family. I will be training them to use a smoke tube. It's still far less work than a kamado and less costly than an outdoor kitchen.

😎 Big Boss Man doing the work lol. The smoke flavor from the KC is good but not as good as the vertical. I’ve been cooking at higher temps than normal due to the cold weather so I’m not sure if that is to blame...
the Bluetooth range is decent... maybe 25 feet. If I go down to my basement I lose connection.

I really like it. It was given to me by Pit Boss to do a video review so my opinion may be skewed but here is my advice... if you need a propane grill, this would be ideal. If you don’t need a propane grill, take a look at their Lockhart or another model

Smoke portion is a huge upgrade from my vertical smoker. The new controller is really dialed in and it’s water resistant so I can finally smoke in the rain. I did a couple steaks using the flame broiler and I really wasn’t impressed with that feature so I think I’ll just be using that side to smoke. I have a charcoal grill and prefer to do steaks that way but that’s just me
